This is my "bread"

Since going on surgical menopause, soy has been my friend. So I started making these absolutely divine soy pancakes. It took me a while to get right, but they're so delicious, you don't even need syrup. In fact, to me they taste better than any wheat bread I've had in my life, so even though they're pancakes, I use them as my "bread" accompaniment with other foods. (The circles behind are cheese, and had them with sardines, eggs, olives and a salad). My "secret" is the 1 tbs of organic honey I put in the mix. Honey is the only "sugar" that has never spiked my blood sugars, even when I was a prediabetic (there's a whole research behind why that is, but that's too much to include in one discussion, and this one is already getting long lol. Maybe next time). I've also tried flaxseed bread (that one takes only 2 minutes in the microwave), and that was great too, but not as beneficial for my symptoms as soy, as I've experienced, so I make this one more. What are your favorite bread substitutes, if you have any?

I am mildly allergic to soy, so I avoid. I eat very little bread, I make regular wheat bread.

@healerWitch - Both my husband and I eat very little bread, but wheat bread does not cause problems to our bodies.

I'm sorry to hear about your allergy. Wheat bread increases inflammation (and joint pain) in my body ever since the menopause, so I have to avoid it.

That is very innovative Soy has many uses. Is it true that too much soy could block intake or absorption of some vitamins?

If you take everything in moderation, and you take care of your gut microbiome, anti-nutrients are not a concern. I also eat everything organic, so I get more vitamins and minerals. I used to be severely anemic, but as soon as I fixed my diet, all nutrient deficiencies were gone without having to worry about nutrient absorption and anti-nutrients. I don't take any mutivitamins nor big doses of iron tablets anymore.

I prefer brown bread, but never made soy bread. How do you make it. Today while doing grocery shopping I have seen soyabean powder in store.

This is for one serving, it makes 3 small pancakes: Mix together the dry parts first: * 1 teaspoon baking powder * 3 tablespoons soy flour/powder Then add the liquids to the mixture and whisk well, in this order: * 1 egg * 1 tablespoon honey * whole milk - I always leave the milk last and add little by little until I get the consistency I want, that usually measures up to 2-3 tablespoons of milk. In a small pan, I coat and heat some extra virgin olive oil (they tend to get sticky otherwise), and add 2 tablespoons of the mixture for each small pancake. Make sure they are done at the bottom before flipping them over. Once the other side is done too, just serve it on a plate.
