My Mid-February menu plan

Since I didn’t get a chance to post my mid-February recipe list on Super Bowl Sunday or last night after volunteering and last night, I’m going to post it tonight to share what I plan to cook this month. Besides the Sheet Pan Kickin Curry Honey Mustard Chicken and Veggies I had last week, I also started my list with the first there recipes over this weekend to get it started. If you’re interested on wanting the recipe links for these recipes, let me know. I’ll send them to you real soon. Notice there’s no slow cooker or dessert recipes in this mix. 1. Greek Pasta with Garlic and Yogurt (Yummly)—It’s been a long time since I’ve selected a recipe from Yummly, I thought it would be great to go back to that site. This simple recipe is perfect for eating on a frugal diet with simple ingredients you can find in your pantry like type of pasta, garlic, chives, and Greek yogurt for the sauce. I’ve made this a week ago. Stay tuned. 2. Buca Di Peppo Chicken Limone (Copykat.com)—This is the only recipe from Copykat.com that’s simple and easy to pair with mashed potatoes, pasta, steamed veggies, or even French fries. Just like breaded chicken, you add lemon zest and lemon juice into the breaded mixture to give it a light citrusy flavor. Lemons, chicken beast, bread crumbs, eggs, and flour are what you need in this simple recipe. I’ve made it this weekend. Stay tuned. 3. Creamy Broccoli Mac and Cheese (Pinterest)—This was my Super Bowl dinner I’ve made last night. This has an alternate twist to the classic Mac and cheese by using medium shells instead of macaroni with broccoli and a yummy creamy sauce. Broccoli, medium shells, shallots, garlic, half-and-half, milk, flour, and unsalted butter is what you need to make this decadent pasta dish. Stay tuned. 4. Healthy Sesame-Orange Ginger Chickpea Stir Fry (Ambitious Kitchen)—This is a nice vegetarian version to cook on a weekend. I thought this would be a great way to try something new to stir fry for a change, no matter if the weather is warm and rainy, or cold and sunny. Chickpeas, an orange, ginger root, red onion and red pepper, green beans, and quinoa are a few ingredients in this recipe. I plan to make this tomorrow night. 5. Mushroom Lovers Pasta (Yummly)—This is the second recipe I’ve picked from Yummly.com. This pasta dish features a lot of mushrooms—just one type of mushrooms or do a mix (baby Bellas, oyster, shiitake) with pappardelle, rosemary, dry white wine, vegetable stock, balsamic vinegar, Parmesan cheese, red pepper flakes, pine nuts and garlic. I do love mushrooms to add my pasta. I wasn’t able to get shiitake mushrooms via Giant Eagle and Acme, but I have white mushrooms to use in its place. I also had trouble finding Pappardelle pasta at either store, but you can use any pasta for this dish. I plan to have this meal this weekend or next weekend, depending if I luck out at the store. 6. Mushroom Cabernet Rigatoni (Pinterest/Just Like Home)-This is the second pasta dish I plan to make this month. Besides mushrooms, you need Italian turkey sauce, chickpeas, rigatoni, olive olive, and Just Like Home pasta sauce that you can purchase via Amazon or a few other stores that’s located on the website. Since I couldn’t find the sausage at Acme last week, I would have to plan to make it maybe this Sunday or next week, depending when I go to the store this weekend. But the recipe sounds so intriguing to make. 7. Stir-Fried Shrimp with Snow Peas and Ginger (All Recipes Magazine, December 2021/January 2021 issue)—This is the only recipe I selected from the magazine to make this month. And who can resist a stir fry with shrimp, ginger, snow peas, chives, mirin (I passed on buying it and will use rice vinegar instead), and vegetable oil. I plan to make it this Friday night for dinner. 8. Best Healthy Turkey Chili (Ambitious Kitchen)—This is the only chili recipe I have on my recipe list to make this month. Besides ground turkey, you need red peppers, olive oil, dark red kidney beans, sour cream, sweet corn, cilantro, and diced tomatoes. Before the weather gets cooler and warmer, this might be my only chance to have chili for dinner. It’s planned to be made early next week between my two volunteering nights at the shelter. 9. Spaghetti with Avocado Pasta Sauce (Yummly)—This is my last recipe I picked from Yummly, and I’m so glad I did. Avocado used as a pasta sauce with lemon, olive oil and parsley. What a healthier alternative to meat sauce to add to your pasta dishes. It could taste like pesto. This is made is less than a half-hour and will be made next weekend. 10. Vegan Pasta Primavera with Creamy Garlic Cashew Sauce (Ambitious Kitchen)—For my final recipe to make in 1.5 weeks, this is another healthier pasta dish that features a vegan version for this meal. Besides cashews, you need broccoli, penne pasta, olive oil, red onions, red peppers, zucchini, and cherry tomatoes to toss together. Sounds yummy, doesn’t it? This would be made a week from next Monday if not earlier. And that’s a wrap for the mid-February meal plan. I’ll be back tomorrow to check in on notifications from the week.

Yes indeed. Most of them are cooked under an hour and needs fifteen minutes or less for prep time.
