Apples. Got any 'to die for' recipes using apples? Now's the time. Thanks be for the harvest.

Cooked apples?
Wash and core apples, one per person. Place in a shallow baking dish, and put about an inch of water in the dish. In the cored center, place about a teaspoon of butter, a half teaspoon of cinnamon mixed with sugar. Sprinkle with nutmeg and bake at about 350 for a half hour, or until tender. Serve while hot, with a scoop of vanilla ice cream.

Wash, core and peel apples, about a pound... place in saucepan with a little brown sugar, cinnamon and nutmeg. Bring to the boil and then simmer for about 15 minutes. Cool and set aside.
In a mixing bowl, place 1 cup coconut, 1 cup self-raising flour, 1 cup brown sugar and 1 cup rolled oats into a mixing bowl. Combine, then melt 100g butter and mix in well.
Place aple into microwave-proof dish, then spoon oat mixture over the apple. Microwave on full heat for 5 minutes in a 700W microwave, then allow to sit for 5 minutes. Serve with lashings of whipped cream or dollops of ice cream.
One of the nicest, and fastest, apple crumbles you will ever come across.
NOTE: ALWAYS use Granny Smith apples for cooking. They hold their shape etc MUCH better than any other apple.
