Chicken salad sandwiches...

I've been craving chicken salad sandwiches for several weeks now but haven't made any until this evening. One reason I haven't made any is that I've been feeling lazy lately so didn't want to take on the herculean task of deboning enough chicken to use for the salad and another reason is that Pretty can't stand the smell of chicken salad. (How anyone can not like the smell of chicken salad sandwiches is beyond me... but she doesn't. *shrug*)
Pretty decided to make quinoa for her supper tonight and, while I don't dislike the smell of quinoa, I dislike the taste of it fried. So, this evening was the perfect time to whip up a large bowl of chicken salad and have some for supper.

Pretty makes it all the time. I don't like it but I don't have to eat it, either.
Lemon in mayo? I've made fresh mayo. I've never heard of putting lemon in it.
Nothing wrong with buying meat already prepared... You and your hubby are still trying to settle in at your new place. It took us months to finally sort everything out here... and we never did find some things we know we packed to bring with us.

@sallypup No, yours isn't "simple" but mine is. It only takes oil and egg to make fresh mayo. (Pretty always adds "extras" to the mayo I mix up for her. She wants low calorie olive oil, for one thing.)

@DaddyEvil So what goes into your mayo batch? Mine is simple: oil, a spoon of water, lemon, vinegar, mustard, the flavorings you like- garlic etc One egg.. Fresh squeezed lemon is best.

Chicken salad is one of my very favorite dishes. What do you put in yours? I use mayo, chopped sweet pickles and celery, a little paprika, salt, pepper, and sugar. I hate the bother of cooking chicken so I often get a rotisserie chicken from Walmart.

Mostly the same ingredients you use but I also add fresh diced onions, garlic and pickle relish... and leave out the sugar.
I've always got baked chicken in the freezer. We buy the large family packs of chicken and I bake them and freeze them for use later.

@1creekgirl We like being able to pull something out of the freezer and dinner is almost ready. It's a lot easier to use chicken that's already baked without flavorings added so it can be made into anything than to go through all the steps necessary to cook the entire meal every time.

Oh yum! I'm fine with chicken salad smell - though I don't find it to be overwhelming - I usually don't have an opinion on it. I love chicken salad sandwiches - especially to take it on a hike or be outside. I don't mind taking chicken off a cooked one . . . I hate deboning raw chicken - too much work.
I never thought to fry quinoa . . . I would think it would burn easily??
Our dinner last night was this recipe for a chicken thigh pasta. It was just "ok", but I had to debone the thighs and that was a bit of a pain.

@DaddyEvil Tuna gone bad, really??? Which came first, the chicken - the egg - or the farts .
If anything, I have bone with some scrappy meat on it if I debone raw. Use it for broth. But yah, it's a pain.
Does she treat fried quinoa like a fried rice with other stuff in it?
I think I remember you saying Pretty doesn't eat broccoli . I like chicken with pasta - but not so much as a tomato based sauce. I like a whiter, maybe creamier sauce with chicken. And cheese makes everything good .

Pretty just told me it smells, to her, like tuna that's gone bad. I have no idea why she thinks it smells like that. She hates the smell of boiling eggs and tells me, when I eat boiled eggs, that I'm eating farts... That always makes me laugh and offer to give her a real fart to smell...
I won't debone raw chicken. If I'm wanting to use chicken in something, I boil the chicken and debone it afterward. It's a lot easier to work with.
I don't think so but I don't pay much attention when she fries it. It doesn't look good to me when it's done frying.
I like chicken and pasta. I made some day before yesterday. I pulled some of the boiled chicken out of the freezer, deboned it and heated it in a skillet before making pasta with cheddar cheese and bits of broccoli on top of the chicken. It came out pretty decent. (Pretty won't eat anything with broccoli in it so I've got leftover pasta in the fridge.)

I don't make my own broth. We buy it when we need it.
I don't know. After she gets the package of quinoa out, I go to my bedroom.
I like chicken and pasta any way I can get it.

I used to just buy them at the store, too. But it's cheaper to make it myself and gives me something to do.

Hello! I haven't seen you for a few days. Has everything been going well for you?
I think Pretty gets recipes for "different" grains online. She tries all kinds of stuff. (I usually sniff what she cooks and then taste a little bit and decide if I'm willing/interested in eating some of it or not.)

I'm glad you like it.
Pretty likes chicken. She objects to the eggs in the chicken salad. (She claims I'm "eating farts" when I eat boiled eggs. )

I think it's the smell of the boiled eggs I put into the chicken salad that she hates so much. She says they smell like farts.
I start with deboned chicken, add six or eight diced boiled eggs, add a tablespoon of mayonnaise, add half of a medium onion diced, add one clove of garlic diced, add a tablespoon of sour cream, add some Soy sauce, add a little salt, two tablespoons of diced dill pickles and stir it all together. I think it comes out delicious. I usually eat it in a sandwich but I ate the last of it this evening without bread.

Oh, yum! I cooked half a dozen beef/pork burger patties today to add to the freezer for when I don't feel like cooking them. We just microwave them and go on with our day.

@just4him I dropped to two meals a day because I started staying up all night and sleeping during the day. But some new arrivals on myLot have been having fun teasing me and keeping me busy until late into our morning here. (Not that I'm complaining, mind you... but I get hungry after working to keep up with them, so have started eating lunch again.)
If you were here more often, I think you'd enjoy Sam, a young man from the Philippines. He's gotten quite good at turning my teasing back on me. )

@DaddyEvil If eating my usual two meals a day was all I ate, it would be good. Lately, I'm heading to the fridge or pantry every couple of hours. It's good I don't keep junk food in the apartment.

My mom used to grow different gourds and cook them. I didn't like it but that could just be because mom didn't know how to cook them correctly.

@aureategloom Oh, wow! I only use mustard in chicken or turkey salad or when I'm slow cooking a roast on the stove. Otherwise, I don't like mustard, either. (I swear, I can't taste the mustard in any of these things.)
When my blood pressure is too low, Pretty makes me eat a little mustard with salt. It doesn't make me throw up and does bring my blood pressure up where it belongs, but I still don't like it.

@DaddyEvil i had honey mustard chicken and it was really good. you're right, you can't taste it in such combinations.
i guess it has more "health benefits" than just lowering temperature.

Yeah, I slept hard all day. I got up long enough to go pee and then fell asleep before I could open myLot today. (I set the bread on the sandwich like that so you could see the chicken salad. )
