Tomato pudding

Many years ago my aunt used to make tomato pudding. It may sound odd, but it was a sweet pudding made from pureed red tomatoes and sugar.
I wish I had gotten the recipe...might be one on the internet.
We recently ate at a small buffet restaurant in the country and I had the chance to enjoy tomato pudding again!
They said it was their "signature dish." I hope we can eat there again.
Have you ever had tomato pudding? There are probably many global versions of it.

@Marilynda1225 It was really good. I tried to make the tomato ice cream at home but it was a total failure.

No, but it sounds good. A tomato pie is awesome and I like the buffets that have stewed tomatoes and biscuits. That is one of my favorite dishes.

My grandma used to make tomato pie but, never tomato pudding. Online, there will be recipes, galore.

@1creekgirl No, it was similar to a pizza, with only sauce. Eating too many sweet foods triggers off migraine headaches.(interesting)

Believe it or not, I have never heard of tomato pudding! I do love tomatoes, but I'm not sure I would like them sweetened and in pudding form. There is nowhere near us that would serve such a thing, so it looks like I'm going to have to have my husband make it from a recipe on the internet!

Old Fashioned Tomato Pudding
1 12oz can tomato paste (puree)
1 1/2 c light brown sugar
1/3 c water
1/8 tsp salt
3/4 c melted butter
4 c bread cubes, dry
Preheat oven to 375F. Use a 1 1/2 qt. casserole dish sprayed with non stick spray.
In a sauce pan combine the tomato paste (puree), sugar, water and salt.
Cook together 5 minutes.Place bread cubes in casserole dish.
Pour melted butter over bread cubesPour tomato mixture over top of previous mixture and toss to make sure it covers the bread.
Set casserole dish in a pan of hot water in oven. Bake for 45 to 55 minutes

I have never heard of it, but it wouldn't surprise me. People made "do" in the 40s so I'm sure that there are lots of recipes we have never heard of!

I've never even heard of tomato pudding and never would have guessed you could make a great tasting pudding from tomatoes. Glad you were able to enjoy it at that restaurant and hope you can find a recipe and make it yourself one day

That's a new one on me, I love tomatoes. This is the first time I've heard of them being made into a pudding using sugar.
