making free chicken stock

At work, we repurpose the unsold rotisserie chickens by pulling the meat off of the carcasses and using it in other recipes. After dismantling the chickens, I put the bones and other scraps back into the rotisserie containers so I (or another employee) can bring them home.
After coming back home from my shift today, I put the contents of 2 of the containers in my Instant Pot, covered them with water, added some celery and onion trimmings, sealed the pot, and started the programmed "Soup/Broth" setting.
Currently, the whole batch is still in the Instant Pot on the "Keep Warm" setting. I'll strain the bones from the chicken stock after we have our dinner and make another batch with the remaining two carcasses.
I see soup in our future!

@spiderdust ohhh I see. Still it’s better than some shops here which just throw away unsold stuff

Well, they do keep the meat off of the chicken. I'm just taking the bones and scraps home.

I've never made stock from bones of any kind. I buy the bottles of powdered soup stock and add a tablespoon to recipes I'm making. It doesn't sound difficult, though.

@spiderdust I won't tell anybody.
When my blood pressure drops too low, Pretty makes up a little bit of the powder in warm water for me to sip until my BP is back up to my "normal".

@DaddyEvil I wonder if it's the salt that does it?

I have the powdered kind on hand too. I think the homemade kind is better, but the powdered kind is good if I don't have any.
I must confess, I put a spoonful of it in the water with the bones instead of using salt when I make the stock.

@spiderdust Right? And surely it's tasty too without having to do too much to it since there is some flavoring on the chicken already .

@much2say Yes, there is a spice rub that's put on the chickens before they go in the rotisserie, so the carcasses are nicely seasoned.

I took a while to come around to it myself, but it's such a game changer. I don't even have to thaw meat before cooking it now, and it's still safe to eat.

@spiderdust You can use it in mashed potatoes instead of a little milk.

I'll use it as the cooking liquid for rice too.

@jstory07 I've heard of doing that too! Sometimes I have cooked the potatoes in the stock and then mashed them in it.

I am so happy to see you posting here! lol. I miss reading your posts. Even though we talk just about every day.
LOL.
I need to do some chicken stock. I bought a gallon of chicken broth from snack guy a couple trips ago. But there's just something so good about buying your own. LOL

It usually tastes much better too! A lot of times I think the boxed kind tastes watery.
I need to get a bigger fat separator though. I have this 2-cup one but need to get a 4-cup one.

@spiderdust With this new job I am hoping that we can finally get stuff that I have been looking at like that. Theres some stuff we need to do to the house, and are planning on doing some repainting and remodeling bit by bit.
I had a fat seperator when baby daddy and I were together, and like most things that I had when we were together he broke or sold.

@thislittlepennyearns Fortunately Amazon carries them, so I should have one soon. I definitely need it before Thanksgiving rolls around.

It's wonderful, and such a comfort. I can use this stock for making lots of other soups too.

Wow!! That’s a pretty good stock for egg drop soup or any other soup when you come home tired and don’t feel like standing too long in the kitchen. Isn’t it? I have been wanting to prepare my portion of stock too. Because I want to start making some soups this winter. I recently saw some very good soup recipes

Exactly! And when I come home from work, I've already been standing all day in a kitchen. I like my dinners to be easy.

I like homemade stock so much better than the store-bought kind too. I got 6 quarts out of that first batch, and it's now in the freezer.

I used 2 cups of the stock as the braising liquid for my pork roast today.

@CarolDM I've got some in the freezer for Thanksgiving stuffing too. It will all get used.
