This is the reason I hate making and baking bread even when I love it the most

I have been kneading this darn dough from last 30 minutes or more and it won’t come together. I don’t know what is my mistake. Whether I follow any recipe, I don’t follow any recipe. My ingredients are correct bla bla. I can never make a perfect dough for pita bread, breads or rolls. While on other hand some people just mix whatever amount they want and the dough will rise perfectly. I feel heartbroken that I can never even make one loaf and enjoy it. At this point I am plain frustrated and angry to decide to make pita breads Can someone please help me? Teach me one simple way to knead a bread dough? I have used active dry yeast. Should I use active dry or instant? I am almost given up on bread making now. It’s been 2-3 years and I remember I kneaded a dough perfectly just once but the bread was hard. Not have I ever gotten perfectly soft bread. I need help!!

I often bake bread. I use instant dry yeast since it is much more common here. It seems that your dough is wet but it is OK. Some bread need wet dough and some need drier dough. I think it is better for you to cover your dough with a towl and then let it rise for some time. It depends on the temperature. If it is hot, it needs less time. The dough will become bigger and then you add a little bit flour and the dough will be perfect.

Even I’m gonna buy instant yeast soon I realised active yeast needs some practice
