A Dish of Nawabs : Lucknawi Omelet

This is a simple dish but the Nawabs of Lucknow a premier city in North India perfected it. It is the English fried eggs embellished with fried onions, dry fruits, and raisins and served with Indian bread (Parotha) One can also have it with toast. Generally, it is made with 2 eggs that are fried in pure ghee. After that chopped onions, almonds, cashew nuts, and raisins are fried and distributed on the egg. It is given the name Lucknawi omelet as the Nawabs of Lucknow loved to eat fried eggs in this manner. Its a sumptuous treat and one is sure to like it. I eat this regularly
