Well that was a disaster

I started making the mix for the strawberry coconut cupcakes and it was a hot mess. I followed the recipe but it was WAY too liquidy. I used up the last of my milk and buttermilk trying to make it so I am going to have to get more and some more grapeseed oil in order to try again tomorrow. Oh well. I was just making them for fun. It isn't like I have a deadline on them. Now I'm cooking down some peeled Granny Smith apple chunks in water with turbinado (raw) sugar, cinnamon, and nutmeg. I make a chunky applesauce and layer that with plain Greek yogurt and raw apple chunks in breakfast yogurt parfaits. I'll have grab and go breakfasts for at least 3 days. Have you cooked anything today?

Ooh, that does sound like a good breakfast. I'm currently making bacon/egg/cheese bites for my breakfast in a little Dash egg bite maker.

I top it with vanilla or coconut granola when I start to eat it. DIVINE!

Our refrigerator is so stuffed, I couldn't fit another item inside. Your breakfast yogurt sounds delicious, layered with chunky applesauce! Yum!

Ah, hopefully the next batch will work out better. I cooked 2 soups today . . . turkey vegetable soup and makeshift pozole.

I have not cooked anything today since it is my relatives who are in charge of cooking the meals inside of the home.
