My date and walnut cake

I always bake this cake for Christmas. Last year I noticed it had turned a bit dry. I looked for reasons and came to know that it is the egg that keeps it moist The recipe had four eggs but I did not realise that I should look at the size of eggs as well This time I have decided to use 5 eggs and hope to have a nice and moist cake. Do you make changes in the original recipes?

I do if I find that something is not quite right, yes I do adjust the recipe. Your cake looks divine though I use buttermilk also to moisten cake.

Most of the time I "adjust" the original recipe to better suit our taste. Often I reduce the quantity of sugar in cakes.

I use cinnamon powder instead of Vanilla. I do not like the smell of Vanilla. I prefer my cakes to be sweet and so sugar content is not reduced.

@LadyDuck We in India are famous for using cardamom and nut meg and Saffron too but Saffron beyond the middle class - very expensive. . I use both generously Our friend grew Vanilla.

@allknowing I like real vanilla pods, not the sachets with fake vanilla. I often use grated orange peel instead of vanilla in muffins.

I would have also bought big eggs if they were available. When we were in the city we had our own eggs - large sized. We had the battery system and we did not eat the chickens but sold them after they no longer laid eggs.

Adding a little bit of grated apple can make a fruit cake nice and moist.
