Gluten-free pancakes

One of my old friends came to stay at the weekend. I’ve known him about 25 years and one of the things we used to do most often was cook together. However he recently discovered that he has a gluten intolerance. You may have read in some of my posts about my experiments with gluten-free cookery for various reasons, so when he told me of his condition it wasn’t such a big deal as it would have been otherwise because I already had a range of suitable ingredients in stock. Dinner was easy as we had pilaff, followed by a gluten-free peach and redcurrant cake using a recipe I made for a friend a while ago. Breakfast was a bit more tricky though as we usually have toast or cereal, most of which are wheat based and we had used up all the cornflakes! I thought it would be porridge or eggs, until he suggested pancakes. So we made up some of our usual recipe but just using gluten-free plain flour. The result was pretty good, they cooked just like normal and tasted nice, although a bit different to the regular ones. Even Little One said they were acceptable and ate them up just as usual! The biggest difference was that the mixture never really combined properly, each time I made a pancake I had to whisk the mix up again because the flour seemed to settle to the bottom. Anyway I was glad we tried because although they won’t be a regular thing (I prefer the flavour of the ordinary pancakes and anyway gluten-free flour is much more expensive) at least I know we have a suitable option if the same situation arises again. I've made gluten-free pancakes. I don't buy gluten-free flour. I use a combination of almond flour and coconut flour. It turns out very well. I'm glad you had a good visit with your friend.

That sounds good, I like nuts. Is almond flour the same as ground almonds or is it more finely ground?

I found a delicious chocolate cookie gluten free recipe using almond and coconut flour. They taste slightly like almond joy candy bars.

I had some gluten-free muffins a few years ago. They were delicious and I ate the whole package (not all at once) but I got all bunged up... guess I need my gluten.

Some of the things I've tried have worked out better than others. Gluten-free vegan brownies were not bad at all, but a chocolate cake recipe from the same person was like sawdust!

@BarBaraPrz There are hazards in overindulging in any food or eating the wrong foods. Thankfully both my wife and I have no food allergies or sensitivities although, strangely, our son has IBS and has to be careful what he eats

The pancakes look delicious ! It was a good job you had so much gluten-free food in stock ! Soybean doesn't agree with me.I don't have a gluten intolerance,but Soybean doesn't agree with me.

It does make life a bit more difficult if you can't eat certain foods. Do you have trouble avoiding soy?

Have you ever tried brown rice flour for gluten free recipes? I never tried but I have seen this suggested as a replacement to regular flour. Chickpea flour is good to make flat bread for breakfast.

No I haven't, in fact I've not seen any brown rice flour at all. I did have regular white rice flour in the cupboard but I opted to go for the most similar to regular flour to try first. Next time I'll try the rice flour.

I buy gluten-free pancake mix. I find it is easier than making my own and it stays good in the cupboard for quite a while.

Never seen any of that. But then I was surprised when I saw regular pancake mix available, pancakes are so easy to make anyway!

My husband discovered he was gluten intolerant several years ago. I do pretty well cooking gluten free, but the worst part is bread. I just can't find a decent bread without gluten.

That's what I thought might happen if I used rice flour, which was the other possibility. I didn't think it would stick together. I will give it a try another time though, just so I can see what happens for future reference!

I'm glad I don't have to worry about gluten-free options at the moment. I've tasted very few things made with gluten substitutes that tasted really good.

I'm trying a few things now. Some things I made already but didn't realise they were gluten free, such as lemon polenta cake and - one of my favourites - Black Forest gateau! It's good to have things to fall back on just in case!

No, not at all, and it's important for some things such as making bread or pasta, it's what really makes those things work! But some people have an intolerance to it which gives them digestive problems.
