The versatile egg

There are always eggs in our fridge as I can make so many dishes from them. Starting with a boiled egg I have every day, I make scrambled eggs, poached eggs, fried eggs. I just used eggs for that date and walnut cake, and a few days ago there was some bread in the fridge. I made bread pudding and for that I had the use of eggs. We also make curry that we have with rice. Mother used to beat up an egg in hot milk, add some brandy and give it to us when we had lung congestion What do you do with eggs? Right now I will skip the egg and just drink the brandy..it is enough to freeze the balls off a brash monkey here tonight. I like eggs too but must only have the expensive ones here.

If my mother gave it to you she would insist that you have the whole thing and not just the brandy

We eat a lot of eggs, also. They're healthy if we don't overdo it.

I didn't know about the recipe for helping with lung congestion. That's a handy hint to know.

I think you are successful in flipping and removing those omelets without breaking them. I am no good there. They always break (lol) not made cookies nor pasta and neither egg drop soup. I have added an egg to the sweet corn and chicken/crab soup

@allknowing I am good in flipping the omelets, Mom always broke them. I also like poached eggs, to serve on ham with a Hollandaise sauce on top.

Bread fried in the pan with the egg makes for better toast.

@allknowing What is super tasty is to tear a chunk of the middle of the bread out, have the pan hot and toast the bread then break the egg into the hole. Once that egg is pretty cooked on one side, do your best to flip the egg and bread over. Very tasty.

I have always used eggs but my partner never used to eat them as he didn't like them (unless made into cake, he could eat plenty of cake!) But then he started on a 'fitness regime' and there are many recommendations to consume eggs after exercise to replenish protein etc, so he went from none to three boiled eggs a day! We are now at a more general compromise situation!

@Fleura We had totally given up eating eggs but took courage to eat one a day and as you have rightly said there seems to be no proof that eggs increase the bad cholesterol. However that fear is so ingrained that even when I eat that egg I feel a wee bit uncomfortable.

3 eggs a day may rake up the cholesterol issue. You need to check on this

Pretty much everything you said here and more. I put them hard boiled and diced in salads, in potato salads, and some pasta salads. I eat them fried or scrambled or in an omelet. I have put them into bowls of Ramen noodles. I use them in a meatloaf—there are few things NOT to do with them.
