First new recipe tried and cooking Pheasant

I tried out the first new recipe this year a few days ago. It was Rhubarb and Strawberry Coffee Cake. I think I baked it a little too long as the outer ring of the coffee cake was a bit harder then I would have liked. My oven was being especially temperamental trying to bake this so it was tough to make. We all thought it was okay but nothing exciting. Today I made a recipe I have made one other time a few weeks back called White chicken enchiladas. Instead of making it with chicken again I made it with pheasant. To make it with pheasant I had to season, seer and bake the pheasant before shredding it. This was my first time cooking pheasant. I’d like to say it will be my last due to how disgusting it was but there’s more left in the freezer. When I went and got groceries a few Days ago I saw pineberries on the shelf. We’ve never had them before so I bought a package for the kids. They loved them and ate them all up. Photos are mine.

Hmm... I'd like to try the cake. It sounds interesting. I won't eat pheasant. It's too tough and stringy, no matter how it's cooked... Pineberries are delicious. I've only seen them in stores here once a few years ago.

@Daddyevil here’s the recipe I used I didn’t try any of the pineberries they were expensive and I wanted the kids to be able to have them. My husband said he could barely taste the difference and thinks the only reason he could tell was because he knew it was in there. I was actually surprised how moist the meat was when I was pulling it off the bone. The very outer layer was a bit tough but that could be discarded if preferred. The rest of it felt exactly like shredding chicken or even more moist then that. There were some stringy pieces but I fed that part and the extremely tough parts around the joints or whatever to the dogs.

@shaggin Thank you. I've only tried pheasant twice. I ate a little when a brother shot one when I was a kid and I ate some when a girlfriend's dad shot one when I was in my twenties. I'm not willing to try it again.

Your cake looks very good. I do not like pheasant I think it has a weird taste, my Mom liked.

@Ladyduck it was okay. A little over cooked I think. One person who left a comment on the recipe said they double the fruit amount. I think that would have made it taste better.

@LadyDuck my oven is about 80 years old and doesn’t stay at the temperature it’s set at. I constantly have to watch and turn it up and down to get it to stay at the right temperature.

@shaggin We never know for sure if our oven is too hot the first time we try a recipe. Doubling the fruits sounds a great idea.

I had that experience with the cake I baked for Xmas. It was slightly burnt

@allknowing aww how disappointing. This wasn’t burnt just a little over cooked so the edges were a bit dryer then it should have been. One piece left I plan to eat now then maybe can make something new tomorrow.

Well, did you need to gut, pluck and clean the pheasant? That would be quite unpleasant to me.

@Sojourn not my husband or stepson did all that. All I had to do was wash the rib cage off to get rid of the blood and a few loose feathers. It was still pretty gross being I am a vegetarian.

@CarolDm if my husband had cooked it and I just had to prepare the enchiladas it would have been great but I told him I could do it. It was so gross picking the meat off the bones.

@BarbaraPrz yes they are white with a hint of pink and are supposed to taste like pineapple. I’ve only two in person in the wild and they were pretty.

@RebeccasFarm the only thing I ate was the coffee cake. There is still two pieces left I wish someone else would eat it up so I can make something else. I ate two pieces yesterday I may have to do that again

@sallypup it wasn’t bad but probably wouldn’t bother to make it again. If it was cooked a little less and if I had doubled the fruit portion like one of the reviewers mentioned doing I think it would have been better.

@sol_cee I’m not sure how they grow the pineberries. I’m thinking it’s a hybrid like the cotton candy grapes stores sell and are expensive.
