Planning to make Roast Beef

I was going to take a roast and turn it into sandwiches. I got a pretty good deal for a 2 lb roast and need to turn it into at least 4 meals to avoid having to get groceries again this week.
I usually use some garlic salt, thyme, and paprika to season the surface of the roast.
Any suggestions on other things that will make some awesome roast beef sandwiches?

Next time you're going to make a beef roast, put the mustard on it before you cook it. The mustard flavor will cook into the meat. You can still put some mustard on the sandwiches if you want but cooking the mustard in just makes a better roast, in my opinion.

You're correct to assume it's too late for this specific roast, but will keep that in mind.
I guess I misunderstood @florelway
You have to have mustard (bonus if it's Dijon on a roast beef sandwich)

I don't do it often though. I just happened to have 1/3 of a loaf of bread left that I got on clearance when the roast beef came on sale...I was about to cut it into small pieces and make a stir-fry

@Methodless You're welcome. Dijon cooked into the beef tastes delicious, too.
I hope you like mustard cooked into beef as well as my daughter and I like it.

Yes you can put some green peppers in it and onions if you like.

I hate onions more than anything else categorized as food! :P
I'm OK with green peppers, but don't like them enough to have any around the house

@Methodless I am not familiar with thyme, how about pepper and worcestershire.
