last night's dinner: beans & franks and tortilla hot dogs

Yesterday I wanted to make something for dinner that wasn't chicken (again) or turkey (which was still frozen) but didn't have a lot on hand. Otto mentioned doing something with hot dogs since I had a decent stash of them in the freezer, but I didn't have any buns, biscuits, or crescent rolls. He mentioned making beanie weenies (is that a copyrighted name? let's just call them beans & franks), but there are 2 kids who still vehemently resist eating beans, and that wasn't a fight I wanted to have yesterday.
What I did have were small flour tortillas. I remembered a few years ago I rolled up hot dogs in tortillas with a slice of cheese and baked them until they were hot (heck, I probably even posted about it on here), and I thought that went over pretty well at the time, but I hadn't done it since. I also wasn't sure if I had enough tortillas to make that work for dinner.
I went with both ideas: I made enough hot dog tortilla roll-ups for one per person, plus I made a casserole dish of beans & franks. At dinnertime, folks could have a single hot dog roll-up as well as all the beans & franks they wanted. I had a lot of shredded cabbage left still from the 5 lb bag of coleslaw mix that I had gotten earlier in the week, so I sauteed some in bacon grease with onions. I also had the ever-present green salad and carrot sticks on the table.

Once a year, I make barbecued baked beans and add slices of polish sausages to it before baking it. Pretty won't eat it so I end up with three or four large meals from a batch. YUM! (This is the only way I will eat shelled beans.)
I don't know what I ate last night. My eyes were still sealed shut. Pretty heated up something I cooked from the freezer. I know it was eggs at the base but I'm not sure if it was cabbage with it or something else. I don't pay a lot of attention if I can't see what I'm eating.

@spiderdust My eyes were sealed shut two days this time and, nope, nobody knows why they do that.
I crumble bacon into my barbecues baked beans, too. YUM! We don't do anything on Memorial Day or the 4th of July.

Oh, I'm sorry you were dealing with eye issues yesterday. Do you know what triggered it?
I'll make barbecued baked beans around Memorial Day and the 4th of July. Mine usually has bacon on top.

@DaddyEvil Those days are more or less excuses for us to do barbecues. I also tend to work on those days because they are double wages days.

@FourWalls Funnily enough, the brand of beans I used was also Van Camp's, but they were just the regular pork & beans.

I used to do roll up pb and j and then cut them like pinwheels for the kids.
LOL. Tortillas are awesome.
DT had pita bread the other day, and I am kicking myself because I didn't grab any.

That looks fantastic, I can imagine how good that tested, A great idea, I often use flour tortillas as opposed to regular bread,

The tortillas and cheese were free from work, as were the hot dogs I think, so this was a good and cheap meal for us.

It was very good! It also accomplished my goal of using what I had on hand and not running to the store to grab buns.
