What's going on the dinner table tonight? Share with us!
Years ago when I was married I would be making some kind of fancy beef like filet mignon or prime rib for my meat-loving husband. I'd pair it with things that were special because I didn't make them often like homemade scalloped potatoes, and stuffed artichokes. One year I even served lobster cocktail as an appetizer. So decadent!
Anyway it is just me and the cats here tonight so I'm only cooking for myself. I marinated chicken tenderloins in a seasoned buttermilk mixture overnight. I am going to roast them rather than bread and fry them. To go with I am going to have some jasmine rice and sauteed yellow squash, zucchini and onions. It will be simple but it will be tasty. Cheap too! I got the chicken for free. I'd say the cost of the rice, zucchini, onion, buttermilk, and seasonings all together will be like $4. That's not bad for 3 or 4 servings.
That's what is happening here. What are YOU having? I want to know!
P.S. If our beloved Fredo was here, he would be having some kind of fish and green vegetable with his husband.
