Belated March spring 2023 recipe list

Mylotter friends, belatedly as promised, here’s my mid-March recipe list for this month with spring-like recipes. I’ve selected recipes that are in the crockpot or take less than a half-hour to make on work nights. This time around, no dessert recipes. I already started my recipes with the first five, and hope to finish the rest by next weekend. As always, I’ve included the links down below for you to make and enjoy, if interested.
Lemon Chicken Pasta (Pinterest: IamHomesteader.com): This is the first of my recipes I’ve made a little over a week ago. It’s such a simple and versatile dish to make in 20 minutes. You need Rotisserie chicken, though I opted for regular grilled chicken. You need a tomato, gemelli pasta, frozen peas, corn, tomato,lemon juice, heavy cream, and parsley. Put it in a pot, and you have a meal ready to be served in no time.
Crockpot Taco Shells and Cheese (Recipesthatcrock.com): This is a delicious and flavorful pasta dish when you can use ground turkey or beef with taco seasoning and small shells with Velveeta cubes and evaporated milk. That’s all you need to toss it into the crockpot for 2-3 hours on low, 1-1.5 hours on high.
Brown Sugar Bacon Chicken (Recipesthatcrock.com): This is a real simple dish when you need chicken thighs or breasts, bacon, and brown sugar. That’s it. It can be paired with any side dish when you cook it for 35-45 minutes at 425 in the oven, or you can choose to cook it in the crockpot for 3-4 hours. It would still taste good either way. I chose to do the crockpot for this recipe.
Brown Butter Pistachio Pesto Pasta with Chickpeas (AmbitiousKitchen.com): I made this recipe on Wednesday night. It was really easy to make. You just have to brown the butter first, then make the pesto with pistachios, lemon zest, garlic, and then cook the pasta like bucatini and spaghetti. Then you add chickpeas and parsley. You can modify it by adding more veggies or protein, add parmesan cheese, and so on, to make it your own. In 35 minutes, you would have a yummy dinner placed on the table.
Skillet Gnocchi with Sausage and Broccoli Rabe (Purewow): Once again, I returned to Purewow’s recipe website to look for easy spring meals to make this month. And I did find this one with gnocchi, broccoli rabe, sausage, parsley, chicken broth, parsley, and sweet onion. I made this recipe tonight. This is another quick recipe to make in a half-hour.
Fresh Shiitake Spring Rolls (Pinterest: Spoonforbacon): Although this is an appetizer, I thought it would be light enough to make for a quick dinner. I never had spring rolls, though it would be interesting to try to make. Rice paper wrapper, cilantro, serrano pepper, ginger root, shiitake mushrooms, tamani or soy sauce, carrots, and mint. This is made in 20 minutes tops and will be made next week.
Avocado Pesto Pasta Salad (Pinterest: MimalistBaker.com): Salads are always perfect for spring seasons. Not much cooking other than the pasta is needed. This one has fusilli, fresh parsley, chives, avocado, sun-dried tomatoes, and vegan parmesan cheese. Hopefully it’ll be warm enough to make this recipe next week in 30 minutes.
Raw Rainbow Veggie Noodle Salad with Peanut Dressing (Pinterest: MinalistBaker.com): For my last belated recipe for this dish, I selected this salad to make with little cooking required in less than an hour. Red bell pepper, carrots, cucumber, red cabbage, kale, soy sauce, creamy peanut butter, snow peas, mango, cilantro, and sunflower seeds. You can also add marinated peanut tofu which is optional for the salad. (If you want this additional link, let me know.) This would be made next Friday to wrap up the month.

I have never heard of any of these dishes.
I bet they are tasty though.
I love springrolls too.
