This summer we are really increasing our fruit intake. Probably will eat more raw vegetables as well. I am just busily anticipating tomorrow's lunch. I made a fruited chicken salad this evening so it could have a few hours to blend itself together. I cooked a whole chicken in the crock pot yesterday. I chilled it, then was able to remove the fat that had cooked out. With the shredded chicken we also have apples, green grapes, dried cranberries and mandarin oranges I peeled and sectioned. Drizzle lime juice on the apples to stop them from browning. I had cooked the chicken without salt, so I lightly dusted it with salt, added Miracle Whip because that is what Bob likes. I would have used mayonnaise for me. We will have that tomorrow for our lunch, and will likely have some crackers or bread of some kind with it. I have other things I want to make into main dish salads, and I am really looking forward to doing so as that is filling but cool for this hot weather.

It sounds chock full of health to me! I think I've eaten more raw vegetables in June than I have the past six months.

I am making a semi-Asia dish in the crock pot (boy are they handy!!!) I was able to get beef heart for a great price so I decided to slow cook it with pineapple, onion, garlic, and pineapple juice. Then tomorrow I will add broccoli, carrots, spinach and cook it some more and then cook some noodles and blend it together and have a bunch of meals out of it. I had lived in Thailand for almost a year and ate the Thai food almost exclusively. It's great either hot or cold so I'm set for quite a few meals. I love it that way because I am a lazy cook...cooking for one doesn't cut it.

I've been eating strawberries fresh from my garden for a couple weeks now, and yesterday I had my first raspberries, also from my garden. I also plucked rhubarb yesterday but didn't get around to cooking it up. Will do that today.

I buy a lot of fresh fruits and vegetables in the summer. Right now we have a watermelon, fresh peaches, bing cherries and radishes and carrots from my garden.

I eat fruit but not in salads. Yours sounds good.
