Lots of hazelnuts!

I have several pounds of hazelnuts at the moment. I've been looking for creative ways to use them, especially non-dessert ideas. Some have been used in homemade pesto and some have been consumed as snacks, and I found a brown butter, Brussels sprouts and pasta with hazelnuts recipe that looks promising.
I may look up recipes that use other nuts and try substituting the hazelnuts. I can definitely toast and chop some to use as a salad topping, or to top my morning yogurt. I wonder how they'd be in a Waldorf-style salad with celery and apples? I can grind them use them as "breadcrumbs" for breading chicken too.
I'll put a couple of pounds in the freezer so they'll still be good for the holidays at the end of the year. I'm more likely to use them in cookies and other desserts then.

You already have so many good ideas and I am sure that you will use them well. That's a lot of hazelnuts. They are supposed to be very good for health. It's not much used in our traditional cooking. My daughters like hazel nut Coco spread on their bread. We get few brands of those here.

That's a favorite spread here too. I thought about making my own, or possibly making hazelnut butter in my food processor, but I'm a little afraid of burning out the motor.
I'll definitely add some to a batch of brownies.

@spiderdust I wanted to suggest you that. To add it to brownies and cupcakes. But then you clearly mentioned that you wanted suggestions but not for desserts

@arunima25 I did, didn't I? Dessert ideas are pretty easy to find, but I try to limit how much sugar I consume.

I remember a few times where I've had trout coated in ground hazelnuts.

@spiderdust Trout is better coated in almonds, but hazelnuts can go well too.

Right now I do not eat them but in this post you have several ideas what to do with them and they are very creative and good ones. Since my weight loss journey I do not eat any nuts whatsoever so do not eat them or put them in anything. They would go good with apples I would say.

They aren't my favorite nut; but I just eat them as a snack. I like just about every kind of nut.

I like nuts, but have bad reactions to a couple varieties. Fortunately hazelnuts are safe for me (so far).

Funny you should post this--a friend gave me 5# of hazelnuts Friday. Tomorrow, I am going to bag them up in 1# bags for the freezer. She gave me walnuts as well--but they were already frozen. I'm not sure how I will use the hazelnuts yet, but nuts are good protein and I won't waste them. I may try that pasta recipe you posted, sometime soon. It sounds delicious!

I really like that pasta recipe! It also gave me the idea that I could try something similar with cabbage instead of the sprouts, since sometimes that's a little bit cheaper and more likely for me to have on hand I guess I'll have to try it this week and see.

That makes perfect sense, brussels are just little cabbages, that's what my kids called them when they were little. I am always up for new vegetable recipes. I will check on the brussels when I go to the store, but it may be cabbage, as well.

@spiderdust That makes sense - brussels sprouts are like teeny cabbages . It'll be interesting as a pasta thing with the hazelnuts!

I'm going to give the Brussels sprouts one a try this week, only I'm using cabbage since I have a largish one in the fridge right now.

The hazelnuts aren't native to where I live.So far ,I haven't eaten them.Our area abounds with chestnuts.

I've occasionally eaten chestnuts, but not very often. Usually they're roasted when I've had them.
