I finally did it!

I've been wanting to make chocolate eclairs from scratch for the longest time. But either I had to go to treatments or I was just too tired or something.
I didn't have radiation today so I thought, "Vicki, this is your chance."
The pastry was gluten free and was surprisingly good. I did use a jello pudding box that I doctored up instead of making my own custard.
Made a chocolate ganache, but for some reason it didn't thicken up enough, so I added a little confectioners sugar.
They taste fairly good, at least enough to stop that craving. But tell you what, bud, it really tired me out. Just had a good nap, though, so I'm just chillin' for now.
Hope you guys are enjoying your Friday. Because of my kidney stones removal surgery next Wednesday, I have a whole week off from radiation! But it's not bad anyway.

Aww I’m so sad to hear you need kidney stone removal surgery. Did chemo or radiation cause them? The chocolate eclairs you made look delicious! I’m glad they taste “fairly good” to you as I know nothing has tasted very good for you since your treatments started and you eating is so important!

@1creekgirl oh okay. The chemo ruined my father in laws kidneys so I wasn’t sure if the treatments were the cause of yours.

I don't think the cancer treatments had any effect on the kidney stones since this has happened to me before.

@shaggin I'm sorry that happened to your father in law. The treatments might save our lives, but they can sure do a lot of damage. How did he get along after that?

This time I had two stones that were lodged. The ER kept me waiting for seven hours and when I finally got to the OR, my surgeon told me later I had about two hours left at that point to survive. I have a stent and look forward to getting the stones out.
