Bitter though it may be Bitter Gourd can be cooked in many different ways making it a dish to long for.
One way to do it is to slice it lengthwise and remove the seeds. Chop it fine and marinate in salt for about an hour Squeeze out the liquid and that will reduce its bitterness.
Cook it with sliced onions and a paste of red chilies, onion, turmeric, garlic and a bit of jeera. Add sufficient jaggery after it boils.Add a bit of tamarind juice and Garnish with garlic and mustard.
Any way you know how to cook bitter gourd?
Bitter gourd as you know is good for diabetics.

Mom grew the bitter gourd plants but she never cooked the young gourds. She wanted the mature gourds to peel after they dried and used them for sponges. (Luffa sponges.)

Are you sure it was bitter gourd or ridge gourd? I know dried ridge gourd is good for producing loofa.

@allknowing She grew the luffa gourd. The young ones are definitely edible. I know they're both called "bitter gourd" here.

Bitter gourd is not widely used here. In fact, I don't even know if I ever heard of it before I was on mylot.
