I Butterfly pea flowers are edible although I have not eaten them so far. After a lot of effort I managed to get some double butterfly indigo pea flowers in our garden. I extracted the colour by boiling a few of flowers in water and the water turned indigo. The pancakes that you see in the photo are made by adding this coloured water to the flour. Because of the flour the colour has turned a slight lighter but I am more than satisfied. You can see the health benefits of these flowers in the link below What edible items can one make with this food colouring Any ideas?

This is my first attempt and since these flowers have health properties I will surely try one of your ideas. Thank you. Hope the colour will stay.

@Dreamerby You can make your own. I have decided to have butterfly pea flower tea as and when the flowers bloom.
