Chinese Omelets

I love a good omelet. My favorite is mushroom and spinach with different cheeses. But recently I have been ordering the Chinese equivalent- Egg Foo Yung. It is so easy to make.
1. Chop celery, bean sprouts, green onions, mushrooms, and cabbage. You can add carrots or other vegetables too.
2. Add to 4-6 eggs and whisk well.
3. Add light soy sauce, a little oyster sauce and sesame oil in a bowl with cornstarch and cook to thicken (to make the sauce).
4. A little vegetable oil and sesame oil in a skillet with garlic. Ladle egg mixture
like making pancakes.
5. Cook until the underside is light brown and then turn to cook on other side.
6. Serve with rice and/or vegetables.
How hard is that?

I just really like eggs and enjoy new ways to eat them. Plus I need more veggies in my diet.

@celticeagle That’s a great way to get them. I like to make veggie muffins: eggs, peppers, onions, tomato, a little salt poured into a muffin tin, and baked. I needed to get more veggies in my diet too.

I'm not a big fan of Egg Foo Yung; but if you can make your own and enjoy it, then that's great!

Sure. And in the summer heat I am always looking for something easy and that doesn't take a lot of electricity(heats up the place)

Are you sure that's not called the everything but the kitchen sink omelet.
My omelets are just plain cheese ones, boring. If I get adventurous, I might chop up and add some onions.

Herr egg foo yung does not have sauce. It is a mixture of different ingredients, stir fry with egg as pancake

Egg Foo Yung is one of the popular dishes here. The ingredients may be different. I usually have mushroom, green onion, shrimps and BBQ pork (cut into small pieces) as ingredients.

I like bean sprouts, celery and onion as the base and then add some mushrooms or shrimp to it.

It sounds easy to make and the ingredients are simple. But I'm not a fan of cabbage. Can I use carrots or broccoli instead?
