my own schedule

Last night I slept poorly, hearing wind and rain blasting outside my window. Today more rain greens my world. I can do what I want these days since I no longer work. I decided I would not go to the pool this morning. I did duck out the back door to grab a bread bag of apples from the tree. I chopped three cups of apples and made a batch of apple bread. Daughter gave me dried blueberries last year. I tossed in a half cup of that fruit and some walnut chunks. The bread mostly has whole wheat flour in it. I cut the sugar back to half what the recipe called for. And you know what? The bread-cake is plenty sweet. I will never understand the difference between a quick bread and cake. The photo is one I took last summer. That's Fred behind Rufus, the garbage can and Peter in the photo. And the side of my house! The walnut tree leaves are there, too.

@RasmaSandra Your description reminds me of the time my hubby and I visited Charleston, N. Carolina. The rain there was crazy hard. In just seconds the streets turned into raging rivers.

Next time I make my ginger walnut biscuits (cookies) I'm going to cut the sugar in half.

@JudyEv Agreed. There's a formula for everything when it comes to baking.

@sallypup Sometimes if you cut out too much of one ingredient, they don't come out as good but I'll have a go and see what happens.

It's nice when your time is your own and you can cook or bake when the urge hits. The quick bread sounds delicious. With that much fruit, you might not need any extra sugar.

@just4him You are right about the fruit. The sugar adds a certain consistency to the bread, though.

I remember mom making apple cake and she never used sugar, the apples she used were sweet enough for her cake ..... besides, I don't really like sweets much.

Great picture. I like not having to follow a schedule too. Your quick bread sounds good. Hope you got some rest last night. Hope you and the crew have a great day.
