Back from work... Cooking lunch

I took a little more than what I estimated to finish all winding up before the mid term break. I came back home at 12:50 and now I am cooking. I had washed and soaked the rice in the morning and just had to switch on the stove. Had already made sambhar ( spicy tangy lentil soup with loads of veggies) and ivy gourd fry in the morning. We had the sambhar with dosa ( Indian pancakes) for breakfast. I made extra for lunch.
Today is the last day in my house to have non veg. From tomorrow, we will not eat it till 24th for religious reasons. We celebrate Navratri with special pooja( prayers) and special bhog( food served to God) for nine long days. And my husband and daughters are fond of nonveg. This week, I made chicken curry on Monday, chicken biryani on Wednesday and today I am frying fish for lunch . I had cleaned it well and marinated it before leaving for work in the morning.
I will shallow fry them on low flame so that they stay tender and juicy. So, as I go ahead with frying them, I would keep mylotting on my phone. Sometimes, phones are so handy
It's past 1 and no one is hungry. The lunch should be ready by 2 and by then my husband would also have a break from work and my daughter would be back from her pre University college. She has her last exam paper today and would come really excited. She too has a ten days break but has enough assignments from her college to keep her busy in this break She loves fried fish and was happy to see me getting it marinated in the morning. My niece would also be back from her college. She is also a fish lover. So, I am sure that everyone will come by 2 and we can have a late lunch together.
I have some eggs left in fridge and we would use them in the dinner, else they would get spoilt in ten days.
So, it's a non veg feast for my family.

@arunima25 - It's not often that I serve sandwiches, but we had to go back to continue our work and it was only a short break. We liked our sandwiches.

@LadyDuck We have to drop elaborate or proper cooking when we have to take care of other important things. It's tough to accomodate too many things and it can be tiring too. Better to keep things simple in life.
Glad that you enjoyed the sandwiches. It's good for a change.

Even I do that. When I have some extra work to be done, I go for a quick and easy cooking. We have to save energy and time for other work. Hope you enjoyed the sandwiches

I don't care for spicy things; but I love lentils. So you eat vegetarian until the 24th? I haven't had any breakfast. For our Meals on Wheels lunch we are supposed to have stuffed peppers. Have a good mid-term break.

Sambhar is spicy. The regular lentils soup that I make is not spicy and you might like it
Why did you skip your breakfast?
Your stuffed pepper meal sounds good. Hope that you enjoyed it.
We are not going to cook, eat or bring any meat, fish or even eggs for the next ten days.
Two days of break are already over. Time flies faster in holidays

I am a vegetarian by choice..I cook non veg for my husband and daughters and for other friends and family when they join us for food. For next ten dats till 24th, it would be pure vegetarian food. We won't eat any meat, fish or even eggs. It would be all veg...grains, lentils, legumes, dairy products,veggies and fruits in the next ten days.
Today was the first day of the festival. The preparations kept me busy.

Mostly we are using up foods that we have prepared on hand, except I made a healthy pancake recipe for breakfast. I put the rest of my lentils in the freezer because my husband does not like the texture. I will pack it into my work lunches because I do like it. I like fried fish and need to fix some. I seldom if ever do vegan or vegetarian meals.

A healthy pancake recipe sounds good. I hope that it even tastes good . I am a vegetarian by choice. I take eggs and fish once in a while in moderation. But my family loves chicken and goat mutton. I do cook for them. Till 24 of this month, we would not eat any nonveg and that includes eggs and fish.

Ever since the pandemic I gave up eating meat and fish
Between 12.30 to one is my lunch time . Cannot imagine starting to cook at that time!!

I am as such a vegetarian by choice. But I cook non veg for my family and friends. I do take eggs and fish occasionally ( once or twice in a year). That's our usual lunch time too..I finish my cooking in the morning before leaving for work. I am back by 12 and then cook hot rice and cut the salad.
