Super-Belated July/August Recipe recipe list with mini report card, part 1

Mylotter friends, better late than never, I’m posting this July/August recipe list with a mini report card to share with you this weekend. Since this is a super-long list, I’m splitting it up into two parts to post over the weekend as well. To get you started, here’s the first half of recipes I’ve made this mid to late summer with the accompanying links down below. I’ll share my Mediterranean diet list sometime next week, after I do some catch-up over the weekend. Enjoy! I'll check back after dinner. See you then.
1. Greek Turkey Meatballs with Orzo and Feta Sauce (Ambitious Kitchen): This was a scrumptious and light pasta dish with ground turkey meatballs over orzo, and topped with a delicious feta sauce. Grade: A+. Leftovers: Yes.
2. Zucchini Fritters with Lemony Sour Cream. (All Recipes Magazine, Summer 2023 edition)--This was one of the two recipes I made last month, before I got sick with crud. It’s been a long while since I made zucchini fritters. Grade: A-. Leftovers: None.
3. Roasted Red Pepper and Goat Cheese Alfredo Pasta (Pinterest: Closet Cooking.) This was a scrumptious and delicious pasta dish with a homemade alfredo sauce with goat cheese crumbles. I took the shortcut of using a jar of roasted red peppers rather than roasting it on my own. Grade: A+. Leftovers: None.
4. Hummus Veggie Wraps (Pinterest: HomemadeMastery.com): These delicious veggie wraps are so easy to make with chickpeas, hummus, a variety of veggies, and tortillas. It takes less than 20 minutes to make them. Grade: A. Leftovers: None.
5. Avocado Salad with Everything (Pinterest: Beauty Bites): This delicious salad has grilled chicken, feta cheese, various veggies, basil, and of course, avocado. Very light and easy to make in 20 minutes. Grade: A+. Leftovers: Yes.
6. Zucchini Mac and Cheese (Ambitious Kitchen): Everyone loves mac and cheese. With medium shells and grated zucchini, unsweetened almond milk, and a sharp cheddar block. It can be versatile with adding broccoli to it too. Grade: A+. Leftovers: Yes.
7. Sweet Potato Taco Bowl (My Kitchen Love): This was a unique meal with all the components of a taco in one bowl. It was so flavorful and not too spicy with the sweet potato added to it. I would make this again somewhere down the road. Grade: A. Leftovers, yes, one round.
8. Vegetarian Paella (Gathering Dreams): Better late than never, I finally made it since I had the right ingredients. And it came out real good to make this hearty meal. I took a shortcut and used Rice-A-Roni’s Spanish Rice and a can of diced tomatoes. It was well worth the wait. Grade: A-. Leftovers: Yes, enough for two more rounds.
