Hello everyone. I hope your day is off to a good start. IT is 48 degrees F and raining here at the Jersey Shore. Yuck. I have been awake since about 7 am. I've done laundry and the dishes. I also have been busy preparing for a visit from an old gym buddy. She moved into a van and has spent the past few years in the western end of the country but she is back in NJ for a bit. I made coconut muffins last night but this morning I also made a fruit salad and a high-protein frittata with sauteed vegetables and cottage cheese. I know she isn't expecting a full on brunch but I so rarely have guests over and I just couldn't help myself. I'm even using some of my beautiful wedding china. It will be fun to visit with her and learn about "van life". I know she will want to hear about what happened to my dad too. She loved seeing him at the gym. I don't have much else planned for the day which is fine with me. I want to finally make the egg nog that I've been planning for weeks. I also have to figure out what to do with like the dozen lemons I have. Maybe I'll just go old school and do lemonade. We shall see. What's everyone else up to today?
