Uber-Belated Mid-Summer Recipe List with Mini Report card, part 2

Mylotter friends, as promised from last week, here’s the second list of my uber midsummer recipe list with a mini report card. This should give you caught up from my July and August recipes from this summer. I’ve posted the links down below for you to try out sometime. I’ll post my two-part Mediterranean diet recipe list by this weekend. I'll be back tomorrow night to do some catch-up posting from the past posts, this summer and up until now. Enjoy!
9. Stuffed Greek Turkey Burgers (FitMittenKitten)-A+. These turkey burgers came out pretty good with the feta and the spinach stuffed inside the patties. It gave it taste and a lot of flavors in one bite. Like with the previous turkey burgers I’ve made in the past couple of times. Grade: A+. Leftovers: yes, pretty decent.
10. Turkey Teriyaki Burgers (Wellplated): These turkey burgers had a tangy twist to them with the teriyaki dressing to marinate. These were one of the favorites I’ve made so far. And yet, they didn’t crumble when I made them and cooked them in the pan. Delicious and scrumptious in every bite. Grade: A+. Leftovers: nope.
11.Yummy Lemony Salmon Burgers (All Recipes Magazine, Summer 2023 edition): This is my first time making any type of salmon burgers. But I loved the hint of lemon to give it some flavor. This turned out better than I had hoped with a can of salmon for the patties. Grade: A-. Leftovers: Nope.
12. Citrus-Smeared Shrimp and avocado Salad (FoodieCrush): This recipe had the best of both worlds: seafood and a salad. It was so easy to smear the shrimp into a citrus coating before tossing it into the salad. It took less than 30 minutes to make. Grade: A+. Leftovers: None.
13. Green Apple, Jicama, and Shrimp Salad (All Recipes Magazine, Summer 2023 edition): This was a perfect combination of a light and flavorful salad. Since I couldn’t find jicama at any Acme store, I substituted it with water chestnuts which worked out great. The shrimp adds a nice tough to the salad. Grade: A-. Leftovers: None.
14. Mushroom Blue Cheese Turkey Burgers (All Recipes Magazine, Summer 2023 edition): This type of turkey burger had a nice combination of crumbled cheese stuffed with mushroom in a burger patty. These tasted delicious and full of delicious flavoring in each bite. And yet, these crumbled as well, when I flipped them over. Grade: A. Leftovers: Yes, one patty.
15. Healthy Bruschetta Chicken (The Whole Cook): I loved this recipe. Who would ever think of putting bruschetta on a chicken breast for the topping. Pure genius. And it takes less than 20 minutes to make. Grade: A+. Leftovers: Yes.
16. Grilled Tahini Chicken Caesar Sandwich (Ambitious Kitchen): If you love chicken sandwiches, you’ll love this flavor combination. The tahini gives me sweetness for the topping, and the lettuce makes it complete for the sandwich. This is filling for a delicious dinner. Grade: A-. Leftovers: Yes.
17. 10 Minute Healthy Mac-and-Cheese with Chicken (Her Highness, Hungry Me): This was so simple and easy to make. You just add the chicken in the end. So full and delicious to make in less than 15 minutes. Grade: A+. Leftovers: Yes.
18. Pesto Zucchini Noodles with Roasted Tomatoes and Grilled Chicken (Closet Cooking): It had been a long time since I used my spiralizer to make veggie noodles or zoodles in this instance. But it was a simple dish with some roasted tomatoes and grilled chicken to toss into the pasta and sauteed in the pan. Grade: A-. Leftovers: None.
19. Amazing Mediterranean Chicken Wraps (Homemademastery.com): Just like the veggie wraps, these easy wraps were delicious and easy to make with hummus, assorted veggies, and the chicken in the middle of the tortillas. Dinner is ready and perfect to have on the go in less than 20 minutes. Grade: A. Leftovers: None.
20. Mango Chicken Stir Fry (Ambitious Kitchen): Last but not least, this was another one of my favorite recipes I’ve made this summer. I loved the mango slices to add to the chicken stir fry over coconut or white rice. Add the veggies to saute and toss and the stir fry is ready for dinner. Grade: A-. Leftovers: Yes.
