Harvest supper tonight

We've had our four garden pumpkins sitting on the front porch. Hubby brought the smallest pumpkin into the kitchen and started to clean its seeds and inner goop out. He did it the way a person does for a Halloween Jack O Lantern.
I took the round top part, the part that has a stem handle, and baked it. The pumpkin baked up quite tender.
We had chunks of the pumpkin with a spoon of hummus, Swiss chard and some canned garbanzos for protein. I've always heard that Jack O Lantern pumpkins were only good for decoration but this one tasted fine to us.
Hubby is going to cut up the rest of the pumpkin and bag it in chunks and freeze the chunks for later. Three more pumpkins to go and one of them has to weigh forty pounds. No sense in buying yams and such until we eat all this pumpkin- wonder if we'll get that done before Spring?!

A lot of meat there. You will probably eat them up before spring.

My mom used to make marinated pumpkin salad and it was very good, If I want pumpkin I buy a pumpkin pie, Enjoy the pumpkin. Happy Thanksgiving to you,

@sallypup she made a mix of water, vinegar, sugar, added 2 cinnamon sticks and cut up chunks of pumpkin and boiled it. The boiling was for about half an hour until the pumpkins were tender but not going to mush. Then let them stand to cool and the pumpkin chunks could be eaten with other things.

@Missmwngi Cut up pieces takes up less space in the freezer. You could also can it or dry it.

I freeze produce from my garden also. It means healthy food available during the winter months when the price of produce is high here. Also I think home grown is always better, as I'm eating it.

@Fishmomma I am with you on those prices. Produce is expensive so we've decided to eat what we have rather than buy something from the store.

Strange that pumpkins that are used for Jack O Lantern cannot be cooked. In what way are they different? Good that you used tem.
