I love most veggies but...

I hate a few. When I was a child I was a veggie hater. All of them fell into that category except lettuce, tomatoes and corb on the cob. Later on I discovered that ,amy of the veggies I hated had been cooked until death by the maid my mom then had. And in many houses in my courry, veggies were cooked the same way. I had to suffer green beans that had turned gray by overcooking with salt. And in those days we had to eat all that was places in our plates. I ate cauliflower that was almost a puree. I could name a lot! But later on in life I first dicovered that the words "al dente" did not have to be use only for pasta. And that most veggies could be steamed. And then I began experimenting with veggies I did not know when I was a child. I met eggplans (one of my favorite), discovered that some veggies could be eaten raw too (like zuchinni and cauliflower) and the vegetable world changed for me. On the other hand, I tried and did not make friends with some veggies. Kale is a no no for me so I don´t buy it. I love other members of that family. She is a cabbage and I love plain normal cabbage. But why buy something you don´t like? And why eat something it is not of your taste? There are many delicious veggies that have a wonderful nutricional value. Do you have a veggie that you just won´t eat?

Your brought back memories, both my mom and her maid overcooked all kind of vegetables. I could not stand eating them. Mom did not like eggplants and bell peppers and those are my favorite vegetables now. I do not eat broccoli and I am not a big fan of Lima beans.

I prefer cauliflower to broccoli and it has to be al dente with homemade mayo. I learned to like Lima beans but they have to be very tender and peeled.

@marguicha For years I could not eat spinach. Mom over cooked them, then let them cool and seasoned with oil and vinegar. I was sick every time I tried to eat. Now I cook them for a very little time and I serve hot with a little butter and Parmesan.

It's fascinating how our perceptions of vegetables can change based on how they are prepared. Personally, I enjoy bitter gourd sautéed or mixed in a green bean soup. The versatility of cooking methods really does make a difference. I love kale but it is too pricey for me.

I also like most of vegetables and sometimes I said I am like a worm. So you can see I like vegetables a lot. However, I don't like something tastes bitter, such as the bitter gourd. It is something I don't want to touch.

In fact, my favorites are kale, cassava leaves and spinach. What I don't like the most is eggplant which can make me vomit, apart from that I also don't like bitter guard which makes my taste disappear.

There is a white-fleshed sweet potato that I don't like much. It has a floury texture that doesn't appeal to me. But I like most other veggies.

I use such potatoes to mash them with lots of butter and milk. The other potatoes are better for other uses.

Spinach, oxalis, sorrel and gemsquash - those just don't do it for me. Try blanching kale first in salt water for a few minutes, rinsing it clean and then cooking it, I find that doing that removes a bit of the overbearing taste.

I am not happy when I have to work too much in order to like something. There are lots of foods that I love and don´t need any special preparation.
