Yummy Chicken

Well, truth is, I will certainly win no awards for presentation. But I suppose that's okay because I am rarely a guy who cares what food looks like so long as it tastes good. And dinner last night did taste good. It was just a simple little meal of baked chicken thighs, buttered kernel corn and a baked potato with just some sour cream on it. Sometimes I like to really load up my potato with butter, sour cream, shredded cheese, bacon bits and the like. But this time I decided to just keep it simple. I like my baked potato any number of ways anyway, and it is good to change it up every once in a while. What went on your plate last night?

Eggs would be good if I could find them for the right price to buy them. I will be out and about today, so we will see what they are going for now. lol

@just4him Me too. Fingers crossed. Like I say, USUALLY holding out presents a bargain eventually. But one never knows these days with prices continuing to rise. Inflation went up another 3.4% in December according to the most recent inflation report. So, we are far from out of the woods.

A large orange cat! LOL! I had an egg sandwich. I just might do myself a dinner with a hunk of beef, some veggies and a microwaved potato tonight. (I need to pick up some cat food today- that's my main reason for going to the store, the kids come first). I "steam" bake my potatoes. I got my mom hooked on them a long time ago. I have a microwave steamer and I put the potatoes in the colander part, set it in the dish with about a half cup of water, put the lid on it and let steam for about 20 minutes. The spuds come out light and fluffy and super tasty. Mom wouldn't have hers any other way.

@porwest There are times when it kind of comes close to eating that large orange cat! If I'm eating something he finds interesting he will reach out and swat at my fork or at my mouth. He makes it plain and clear that he wants his share too....not that he's spoiled or anything. When you do the potato on the plate with the water, set a bowl over the set up and cook the spud. It turns out so soft, moist and yummy.

@BearArtistLady Hmm. I will keep that in mind. As for cats swatting, Cal was terrible about that, often catching a sharp claw into one of my fingers. I wanted to smack him across the room, because it hurts like hell. But of course the cute face always wins me over.

You ate a CAT??? lol. Actually egg sandwiches are very good and it has been a long time since I have had one. When I bake a potato I either do it in the microwave or in the oven. When I do them in the microwave I don't steam them necessarily. I just put them on a plate and poke them and then put a small amount of water on the plate.

@porwest It's a baked chicken (cut in pieces) with black and green olives, capers and dried tomatoes.

Last night I had smoked sausage cooked with cabbage, apple, onion, sweet potato and white potato all in a big iron skillet. Also had a serving of buttered peas and carrots. I would happily eat your meal. Maybe change out the veggie, but I like corn okay. It just spikes my blood sugar.

@moffittjc Oh no. Not hardly. Most of the time it is much harder to find my potato though under a pile of sour cream, cheese, bacon bits and what not. lol But it's not to intentionally mask or hide the potato. Just to make it better.

I think your presentation looks fine and your supper sounds yummy. I already told your what I had last night, the pork blade steaks cooked on the stove until they were browned nicely. Half the time I forget to add cheese. But then again I'm trying to stay away from too much starch. I'm making sweet and sour chicken tonight. I'll use fresh peppers, canned pineapple and sauce from a packet. The chicken is thawing on the counter-i should have taken it out earlier. And rice for my husband. Sometimes I'll use riced cauliflower for myself but I'm out. I might chop some frozen cauliflower. That would work.

@porwest it was good and I thought there was enough leftovers for both of us. But since I wasn't feeling good yesterday my husband assumed I wouldn't want any.

I have not made sweet and sour chicken in a while. I may have to add that to the list of things to make soon. Reading about food here can be quite daunting because I get reminded of dishes I like and need to make. It's a good thing, though. lol

Vin always likes to present his meals nicely but really it doesn't matter to me. If I'm cooking, I try to make an effort for his sake.

If I have company I may take more care. But if it's just the two of us, which it almost always is, presentation is the farthest thing from my mind. lol

I’ve heard people say that we eat with our eyes first so if it doesn’t look good we may not want to try it. But I guess it also would depend on how hungry we are lol. To me, taste is more important than presentation but there have been times where the look threw me off and I said no to taking a bite. Last night I baked whole halibut and made some cauliflower for the side. I boiled it and then sautéed in the skillet. Never again. Got too soft. Will just blanch next time.

@porwest I love fish. What I hate is all them bones you gotta pick at if it's a whole fish. Makes the meal less enjoyable.

SOMETIMES something just doesn't look appealing and I may skip it for that reason. But yeah, presentation is not the most important thing to me. Baked halibut is DELICIOUS.

It doesn't matter how you presented it. It looks sweet and delicious. I like your combination. I had chapati with heart meat yesterday supper.

Yeah, for me presentation is nice if you have company, maybe. Other than that, I just want it to taste good.
