Yummy Eggplant Parm

Not that it is that hard to make, but it had been a while since I made eggplant parmigiana, so I just decided to tool around the 'net a bit and get some refreshers and see if there might be some interesting plays on the idea. Usually, in the past, when I would make this, I always peeled the skin off the eggplant. But several recipes said to just leave it on. So, I decided for this batch I would try that and see if there was any noticeable difference. There wasn't, and I think from now I won't bother removing the skin. I would not say it was better. Just easier. All said, the dish turned out delicious, and of course this is not the finished parmigiana, just a picture of the fried pieces of eggplant. What went on your dinner table last night?

I never remove the skin and I love the eggplants simply sliced breaded and fried.

@porwest I have never removed the skin from the eggplants. Some varieties have a thinner skin. When I fry eggplants I usually fry A LOT!

I don't think I will ever remove the skins ever again. I am sure there are extra nutrients in the skin as well.

You can´t go wrong with eggplant. I love it! I did not eat much last night. I had a tummy ache and still have it.

@porwest I´m much better. Thank you. Today I boiled one of the tongues (zero cholesterol) but I will have to see if I want to eat parto of it. My body always tells me what to do (or most of the times).

Looks good. I had a frozen Meals on Wheels dinner - Sweet and sour meatballs, rice, mixed veggies, peas and grapes. Have a good day.

@porwest The only problem was that they weren't hot enough; and I didn't want to trek back to the kitchen to put them back in the microwave.

I have to look for some other recipes. To date this is all I ever used eggplant for. But it IS good, and I am sure would be good cooked any way.

Not me, I can't stand eggplant, so that's not 1 for my plate but glad you like it, & yes I know it's healthy for you but I never had a taste for it, we had some cabbage for dinner.

I love me some cabbage. Just give it to me boiled and buttered with a wee bit of salt and I am good.
