Last Night's Dinner: Egg Wrap Enchiladas

Last night, Courtney and I made enchiladas for dinner. We used egg wraps as a substitute for traditional enchilada wraps.
The egg wraps are a bit pricey, but worth it to me.
We've made those types of enchiladas before and it's a favorite dish.
Ingredients are beef, shredded cheese, enchilada sauce, and the egg wraps.

@MarieCoyle, they really are very good.
I am going to use the egg wraps in other future recipes, such as tacos/burritos and even as a substitute for lasagna noodles.

My son likes what he calls breakfast burritos. Make scrambled eggs and add whatever you like, green chilies, cheese, tomato, whatever and wrap them up. We make a few extra when we fix them and then he has some for the next day. We also use them for chicken fajitas. Lasagna replacement sounds good, I may have to try that!

@MarieCoyle I love how versatile egg wraps are, the ones we buy look and feel very similar to flour tortillas so I know they'll be great for burritos ( I am a big fan of breakfast burritos.)
Chicken fajitas are a great option as well.
