These are called Country Cakes - I made 2 of them

Got the recipe from a friend in Tennessee but the frosting, I made from scratch.
It’s my niece & nephew’s b-day tomorrow (twins) and I’ve been waiting for a good opportunity to make these.
None of this is organic or seed oil-free but they don’t care about any of that so I just spared them and used all the naughty stuff to make these taste delicious. (I hope!)
The frosting is my own recipe.
I call it Cream Cheese Butter Cream..
1 stick of softened butter
1 tsp vanilla extract
2 tbsp cream cheese
2 tbsp heavy whipping cream
1 cup powdered sugar
Blend it all together. (I have never used a blender a day of my life.) I just mix it up really well old-fashioned style, with a big spoon.
It has this buttery, almost cheesecake-like taste to it.
So that’s it, folks. It’s a Saturday Night Live kind of night because I’m beat. First the woods, then the cakes, and that’s enough for me.
I hope SNL will be a new one.
I should make this a discussion along with journal entry. Ok, are you a chocolate cake person or vanilla cake person?

Thanks Judy, we have yet to try them. The kiddies got them, but I heard they were great. I still think it’s the frosting that steals the show. Homemade frosting vs canned?

Hi Judy, yes.. it’s a very rich cake with some custard running through the middle. You also add a bit of cornmeal and almond flour to the regular flour, it blends in nicely and you end up with that “home style” flavor. I noticed when I took these two out of the oven, they were pretty heavy. It’s why you have to use pie plates instead of regular cake pans. There is too much richness to these and you run the risk of not cooking them all the way thru to the center. These guys almost bake like pies.
