Good Afternoon 4/28: about how i cooked my dinner for today BY MYSELF!

Good afternoon!
on a spur-of-the-moment thought, I decided I was tired of spending so much money on prepared and frozen meals.
so today, I wanted to make macaroni and cheese but my milk is about 10+ days old. So I looked around my kitchen and saw a plastic container full of noodles and I had butter in the refrigerator.
So I made buttered noodles! I was nervous at first so I did deep breathing which my therapist and I talked about. I could only do three or four of the deep breaths and I felt somewhat better. I couldn't do more as my sister called me on the phone
That is okay my sister called that is another thing my therapist told me about ---Refocusing. My attention was no longer focused on my boiling water then when I added the noodles. Rather it was refocused on my sister who called to tell me my handyman was coming to see if he could fix my bathroom sink,
By the time I got off the phone, my noodles only had a little over 2 minutes left to boil. After that, I added the butter and put them in the refrigerator and now I will have that for dinner with a ham sandwich as last week chipped ham was on sale for $1 off a pound! It is usually $4.99 a pound and was $3.99 a pound last week.
I feel so proud of myself that I cooked. I think my therapist is really going to help me!
What are you having for dinner today? I realize I cooked dinner around 10:30 A.M. but i do everything I do very early!
Because of my therapist, I might be able to stick to my new grocery budget of $35 a week. I will look at what I have in my pantry and cook what i have but i will also meal plan and only buy what is absolutely necessary

@kaylachan Yes, I will make simple things. Tomorrow morning I may make gnocchi (from a box) so I have them for Tuesday as we should have numerous thunderstorms on Tuesday and I refuse to cook during a thunderstorm as I have an electric stove.

Thank you! It was good for me as it proved I could cook alone. I have cooked in the past but it was mostly with the help of my peer. The problem is my peer only comes once a week and we have to do other things, too, so we don't always get a chance to cook together.
A long time ago I did cook on my own, basic things like buttered noodles and all kinds of noodles

Today I will be centered in eating more leftovers. I always cook all sorts of food. Today I have the rest of the roast pork I made for my daughter 2 days ago. I spend more that $35 a week but only because I love special cheeses, hams and the like. This month I plan to spend less (to help pay for the garden work) And I know I can do it.

that is a good idea to eat leftovers. I will be finishing the noodles tomorrow that I made today.
I usually spend more than $35 a week but am working on trying to get it down to that much. I can only go to one grocery store with my peer who helps me and this store has mostly basic things, I won't find special cheeses at it.
I have to spend less to be able to have therapy hopefully once a week. I called my insurance company as soon as they opened on Saturday morning and I have less of a copay as a search engine told me I would have to pay. If I had to pay what the search engine search said I would not be going to therapy. But I think I can manage it if I don't spend so much
I know you can lower how much you spend on groceries for this month!

@marguicha I live alone, too! I used to make eggs years ago, but I made scrambled eggs instead of omelets. I could never figure out how to make one.

Way to go Jennifer! Just don't allow yourself to think negatively, and you will be fine with cooking. So, what if something goes wrong? Mistakes happen and you aren't going to burn the house down!

Thank you so much! I tend to be negative. I am going to work on that with cooking.
And you are right, I had my dinner already and the noodles were a bit on the hard side, but as you said mistakes happen. I wasn't too upset as I ate them. The positive side is they still were tasty! the noodles came in a bag and my sister put them in a plastic pasta storage container and threw the bag away. I didn't know how long to boil them!
I will have more for my usual combination lunch/dinner somewhere between noon and 2 p.m. when I am not busy and be happy I made them myself! I need to be done and ready for all my TV shows that start at 2 p.m. until I go to bed

@LadyDuck I talked to my therapist about it and she said I have to eat. Thus after our session, I had an Italian sub for dinner! The grocery store where my peer takes me has been having Italian subs Buy One Get One Free sale every Wednesday. and that is the day I go out with my peer!
I am going to eat for sure as I want to please my therapist

I can cook a few things, but my anxiety is getting worse every day when it comes to eating them. I am not eating much as I get such severe anxiety when it is time to eat.

Hey there! Your spontaneous cooking adventure sounds like a success! Buttered noodles can be so comforting. It's awesome that you used some techniques from your therapy to manage any nerves, and it's great that your sister's call helped you practice refocusing. As for dinner tonight, I'm thinking of whipping up some stir-fry with whatever veggies I have on hand. Your dedication to sticking to your grocery budget is inspiring! I had them and they had a delicious flavor! But the noodles were a little too hard. But that was okay as they filled me up! they weren't like rocks
I didn't realize that with a good therapist, one can get so much help from therapy, especially with only one session between us.
Your stir-fry sounds scrumptious! making a stir-fry is a bit beyond my skills. However, I think my brother-in-law makes them.

You did it, Jennifer! I knew you could. See...the new stove behaved well, now this evening you can have noodles! That is so good, that you are trying to cook some things for yourself, Very proud of you.
You might want to have just a few things in your pantry for a time when plans change, the weather is too bad, or you might not feel well due to a cold, etc. and need to stay inside. Maybe some chicken soup or a can or two of other kind you like, and your macaroni and cheese, something you like you can just have on hand for yourself. If you use it, you can replace it the next time so you still have one. Then, since you can cook, you will always have something to eat.
Just think, you used your stove! I know this is huge for you.

I am just so glad. You will get better with practice! When you cook any kind of pasta, and you think it’s close to done, fish out one noodle with a dinner fork. Blow on it and taste it. That’s how I taught my kids to cook macaroni or other pasta.
Another thing you might consider if you just mostly cook with milk is to keep a small amount of powdered milk in your pantry. You can make just a dab of it, or a cup, or one single packet makes like a quart. It stirs up easily and works great for cooking. I always keep a small amount, we never know here if due to my son I can get to the store or not. He puts it in cereal as well, it’s just like regular milk. Tastes a teeny bit different but if you cook with it, it tastes the same. It’s just milk that’s been dehydrated. You can drink it, cook with it, or whatever without worrying about the date!!
I am glad the new stove is cooperating. I know your peer will be proud of you, too.

thanks for the idea about powdered milk, but I have to drink Fairlife milk as it is lactose-free yet tastes delicious. I could never handle drinking regular milk (or eating regular ice cream) without serious digestive problems.
Since Fairlife lasts about a month, I can justify the more expensive than the cost of non-lactose-free milk.
I can't wait to see my peer to share my good news with her this week!

Yes, the stove acted perfectly! He was a perfect gentleman! I had my noodles this afternoon as I eat my lunch/dinner between noon and 2 p.m. then I am done eating for the day.
My noodles were tasty but I think I boiled them too long as they were a little bit hard, but was no big deal though because the butter taste made them so good! I am not going to boil the next portion at 7 1/2 minutes as I did the noodles I made today.
I have to look in one of the pantries, I might have some soup. I don't remember as I haven't looked in the pantry in a long time. I have a lot of macaroni and cheese but I have to get milk this week.
I just remembered my peer had me buy boxes of chicken noodle soup as it is soft and I am getting four wisdom teeth and two others at the end of June.
I never thought of replacing something after I used it. I will have to put those down on the steno pad I used to put things I needed to buy. I will start that list again in a minute and put milk on it.
Yes, I used my stove and he is confused somebody is using him

@just4him Yesterday I spent $33.34 on my groceries for the week. I bought regular-sized tomatoes as they were on sale for $1.50 a pound instead of buying grape tomatoes for $3.99 a pound!

it certainly does feel like a great accomplishment! My therapist is the best of all the therapists I have ever had! we have to wait until May 23 when she can see me again and then we will see each other every Thursday when we will have a standing appointment with each other in the morning and I am so excited!

Good for you. It must have been hard for you. Enjoy it. I do not eat dinner. During the week I eat breakfast and lunch and nothing else after that. If want something in between then I drink something.

I have been doing something similar to you. I have breakfast and lunch/dinner at noon.
do you drink something after lunch? I drink a lot of water after lunch until bed. I have to have enough water because I could get sick without enough water while I am on two different medicines.
My personal mail is not working am so sorry I have no idea of the answer to your question. the administrator is very good maybe you could write him?

@LovesEverybody Sometimes the progress is made faster. I found some good therapists and they helped me so much. But after a while they lost interest.

Yes, I never guessed I would be cooking with one therapy session! I didn't know therapy could be so helpful! I expected it would take me months of seeing my therapist to see any results!

@dya80dya You are lucky to have been helped by therapists. It took me over 40+ years since I have been seeing therapists and psychiatrists before I finally found one that I think will help me
