Simple yet healthy dinner

I always make sure to cook my meals at home to save some money and have control over what I eat. However, sometimes I feel too tired to prepare anything, given that I get tired quite quickly. On top of that, I spend most of my time alone. However, I do not have any other option but to cook meals so that I can save some money for my dad's dialysis. To save time and energy, I usually cook in large batches and reheat them on the following days. All I need to do is cook some brown or black rice to go along with it. For tonight's dinner, I made a bowl of salad and added some apple cider vinegar for the dressing. I plan to have the leftover salad for lunch tomorrow.

I also prefer to cook at home, it's cheaper and you know what you use.

@freelancermariagrace - My husband has several health problems, I know that it's safer if I cook at home.

@LadyDuck Cooking your own meals at home allows you to have complete control over the ingredients you use, making it a much healthier option. Hehe

That is correct. It is more affordable and ideal if you have an underlying health condition. It helps me since I know what is in my food. I do not use salt that much.

I hope your dad is okay now. I don't really cook since my mom cooks for us, I live with my parents still with my sister.

Same here. I always make sure to prepare my own lunch and dinner at home. Do you also cook in large batches? Thank you. Unfortunately, he is not doing well. He is trying to survive every dialysis session.
