When leftovers are very good meals.

Today I ate for lunch the same thing I had yesterday for my visitors.
I started with a bit of leftover Camembert cheese over a couple of crackers. Then I ate the rest of the potato salad, the green salad, tongue, chimichurri and mayo.
I did not have pancakes fror dessert although there are several left. But I ate some bonbons. Then I came to my bedroom and turned on the heater. Before I knew it, I was fast asleep.
I haven´t taken to the dining room where it was my Alexa. It is at the other night table so I am using it as a clock. When I woke up I asked "Alexa, what time is it?" And it answered nicely and added "have a good day.".
I now gave Luna its meal. Yesterday´s dishes are washed and my guardian angel is drying them. I only have to put them away to make room for the empty salad pots I now have.
Tonight I´ll make some pancakes for me.

Leftovers are a common meal for me as when I cook, I usually cook enough for the next day or more. Some things I cook are one meal only, but mostly I cook with the purpose of leftovers. It makes things easier for me. Many things that I cook, I make the same amounts I made when I had a whole family of 4 to feed. It is not just me, so there are tons of leftovers. Sometimes I freeze the leftover so that I have meals ready to heat for those nights I do not want to cook.

@marguicha When I make curry I cook 3 cups of rice. It lasts for several days with the curry, unless I give some to my daughter.

I could not cook rice for only one meal. Even though I now cook one cup instead of 2, the one cup is enough for several meals.

@capirani Rice lasts a long time if you place it in the fridge in a good Tupperware or tthe like.

@marguicha ......It is delicious. It is sort of a mix between devil's egg salad and one with sweet pickle in it. Many do not like the pickles in potato salad but I do. It's very tasty.

@celticeagle I always dice dill pickles in my potato salad. But when my grandchildren come, I have to make another one too. They don´t like mine.
