I've gone to the beet side

Yesterday was breaded shrimp basket supper and that was tasty for sure- a grand way to celebrate Mom's Day. Today I stepped back into the other side of the planet: beets. I'm really not a fan of beets. (My Mom loved them!) I gave it a go. I boiled some nice little beets. I sliced them when they cooled. I slurped in some cider vinegar, feta cheese, minced garlic, minced radish, mint from our backstep garden. I dumped in some pecan bits. The whole thing turned out very tasty. Hubby loves beets. He ate a big helping and said he wanted a repeat. Most recipes call for oil added to the cider vinegar but I didn't think it was necessary. Neither of us missed the oil sheen.

I wouldn't eaither. My stomach isn't a huge fan of oil, anyway.

@just4him I'm discovering new ways and old ways as I head into plant based health. I loved having a dinner salad that included mint that grows right outside my back door. I loved the color on the plate. I loved not having grease in my mouth. And yes, I did not harm any living thing by it.

@celticeagle These beets did come across as pickled due to the cider vinegar. The Feta cheese is kind of sour, too, so that helped.

That sounds tasty! I put beets and their stems into my egg muffins, and I really like the way they turned out, along with a few other veggies.

The only kind of beets I've ever liked were the fermented ones that have a sour/tart kinda flavor.
