Tomorrow´s lunch is taking me out of my comfort zone.

Dixie called me to tell me that Ariel (her grandson) and his GF were coming too. Do not worry, she told me, I´ll bring some vegetarian empanadas for them because they are vegetarian. I do worry, though. I want to treat them well and that includes their family. I love Ariel but I am sorry that his GF has Crohn´s disease. And Dixie has diabetes. Dixie told me to only worry about Humberto´s garbanzos. And that´s something else because he loathes garbanzos and this is a dare. I told him that he hadn´t tried mine. But still, I have to have a plan B. I usually make legumes in the pressure cooker and it is very simple and quick. But here, I have to boil until tender the leg of a pork (in the pressure cooker) and then cook the garbanzos in the pork broth. Aside, just in salted water, I´m cooking garbanzos for the humus. That can be eaten by everyone. But as I don´t have another pressure cooker, the garbanzos for the humus are simmering in a normal pot. It will take a long time. I´m asking myself whether I should buy a cake for dessert. Humberto´s birthday is in 2 more days. I´ll give him his bottle of Jack Daniels tomorrow and will bring 2 glasses to the table after lunch. After all, I haven´t bought too many things this month. I did not meet my challenge of not buying any grocery, but I have bought less. I hope I can have the garbanzos ready today. And the humus. And tomorrow I´ll take a double dose of pain killers. Now I´ll go check the pots. See you.
