The aroma of my lunch....

Good afternoon and a Happy Thursday from this side of the planet . It's 1:30 PM and I am waiting for my elder daughter to finish her work( she is doing a remote internship in her semester break) and join us. Younger daughter is sitting down with her crochet project while waiting for her. She is making a mobile pouch for her friend who has invited her for lunch on Saturday. My husband is working from home and he too will join us in some time. What better way to kill this waiting time with some mylotting . So, I am here.
The aroma of my lunch is filling the house. I had made breakfast and did all the preparation for lunch before leaving the house early in the morning for lunch. And as soon as I entered the house at 12:15, I changed and entered the kitchen. And quickly the lunch got ready. It's daal palak( lentils cooked with spinach and seasoned with cumin, bayleaf, green chillies, garlic, onion and tomatoes), basmati rice, Egg plant and raw banana slices shallow fried as side dishes along with curd and sliced cucumber. It's a heavenly aroma in my house and I am really feeling hungry .
Hey, another Friday is here. So, weekend is knocking again . I hope that you all had a good week and are looking forward to this weekend.

Just by the look at it... It seems creamy an tasty, i thought it also hass a squash but it was not mentioned in the ingredients. Thank you for sharing.

Thank you. It's indeed yummy, healthy and quick to cook. What else can one ask from a dish. I did not use squash here. We have other preparation with daal ( lentils) using bottle gourd, ridge gourd, raw papayas and few other veggies. They all taste good after some good seasoning.

@arunima25 We use to add instead of tomatoes during summer and rainy season. It's a kind of substitution I guess... we ends up cooking with fish, chicken, okra, brinjal ... and my native people mostly cook roselle leaves with dry fish

@psanasangma I would love to try your native dishes. They all sound so delicious. I am a vegetarian by choice but can go for little chicken and fish once or twice in a year. I cook non veg for my husband and daughters. They love it.

@sathviksouvik This is not innovative one. Dal palak is a very common dish in every Indian household. Isn't it. Quite simple and easy to cook too. Comes handy on working days when we are too busy.

Your lunch looks delicious. Yesterday was the 4th of July...our Independence Day. There were constant fireworks for 2 hours starting at 9 pm. I hope you have a wonderful day and weekend.

Thank you Linda. It was yummy and we relished it. I hope that you had a good Independence day. My husband's counterparts in the US were on a holiday and so, it was a pretty relaxed day for him at the work. He worked from home.

Thank you. It was really yummy and we all relished it. What else can one ask from a good dish... yummy, healthy and very quick to prepare. . There are times when we also manage with easy to go snacks in our dinner, especially when we have a late lunch or we eat more in lunch
