What's for dinner? July 24

What's going on the dinner table tonight? I want to know! I am finally going to get around to making a corn chowder that I've had on my list for well over a week. It is a corn chowder with chile, lime, and Mexican cheese. It is a Smitten Kitchen recipe and is based on Mexican street corn (elotes/esquites). I love elotes so this recipe is right up my alley. The most annoying thing will be cutting the corn kernels off of 8 (!!) cobs. Oh well. The rest of it is simple enough to do. That's what is happening here. What are YOU having? Share with us!

I have been cooking so many different foods in the new air fryer over the past couple of days that our fridge has been piling up with leftovers. My daughter and my girlfriend were out this evening consoling a close friend of theirs whose dad recently passed away unexpectedly. So since I was by myself tonight, I just munched on a bunch of leftovers.

@NJChicaa It's a challenge here, because I'm the only one in the house who will eat leftovers. The girls won't touch them. So we try to plan/cook our meals so that we don't have many leftovers. Or, if we do, I try to take them in my lunch to work the next day.

@NJChicaa They shouldn't be. Just take them to work for lunch. It saves money and you get to use up the leftovers. Beyond that, most leftovers can be repurposed into new meals—IF you are a good cook and are creative, which I realize is a struggle for you.

I love corn chowder. Progresso makes it but they haven't had any recently. Meals on Wheels was a Sloppy Joe, PB&J for dinner. Have a good day.

I made baked chicken thighs. Just seasoned them with a little salt and pepper, onion and garlic powder and then poured some leftover riblet sauce I had from a previous On-Cor meal, which is something I do often and is delicious. It's basically like a barbecue sauce. On the side I made some macaroni and cheese and buttered mixed vegetables.

I had a late lunch. Hubby is busy roasting sunflower seeds and peanuts so he can make some nut butter. A nut butter sandwich sounds good enough.

I made a pot roast last week and froze the leftovers. Today my son asked if it could be Beef Manhattans, so that’s what he got. He asked for corn since we were gifted some fresh so we had that. I ate a green salad and some of the meat and corn, so it worked out fine. I absolutely love corn chowder. It’s worth the trouble.
