Hubby went to church yesterday. He returned with a large bag filled with solid food- dried beans of all sorts, even some brown rice. I left the black eyed peas out and put the rest into the back freezer for safe keeping.
Where did all these bags of gold come from? The Free Pantry: folks had given this food to those in need. Those in need didn't want it or didn't know how to deal with dried beans or didn't have a stove to cook on. So the bags of beans piled up. Even some instant oatmeal that one of the other church goers took.
Made me sad. Solid backbone protein and not working for those most in need. I will cook up the white beans and turn them into hummus. I will boil in a carrot with the lentils and black eyed peas and make a filling supper. Not fancy food but good for us meals.

Beans are all right, I don't eat too much of them and so I stick to canned beans, I am not a fan of black eyed peas. I love red kidney beans and lentils,

My guess is a lot didn’t know how to cook them, sadly. From my understanding, a lot of food from pantries are canned food. I imagine more people have working microwaves than stoves too.
It’s a shame though because that is some mighty useful and tasty food.

We get free bags of beans and even canned goods from our friend Kevin. His cupboards get over packed with these food items, because the neighbors in his building won't cook them, or they don't know how to prepare them. We even got bags of dried almonds! At the grocery store, these are very expensive:( These are perfect protein foods!

I love hearty and healthy meals, especially a good soup or stew. Give me a mix of beans, a variety of fresh vegetables, and a bit of meat to work with, and I can create something delicious. Dried beans are delicious, and sure not hard to cook. In fact, I would think it would be difficult to mess them up! I keep dried kidney (red) beans, small black turtle beans, Great Northerns, baby limas, green split peas, rice, black eyed peas, garbanzo beans, lentils, also old-fashioned oatmeal in bulk, these can be safely kept for a long time if stored properly. I've always used these, especially in cold weather for soups, etc. So much protein and rich in vitamins.
I was given 20 lbs. each of dried red beans and Great Northerns. That's 40 lbs. of beans. Like you, they were given to me by a friend who said they are not a popular item at the food pantry. I shared them with some friends who were thrilled to get them, and yes, know how to cook them. It's certainly not hard...make soup, chili, hearty dishes, hummus, black bean burgers, cowboy beans, lentil tacos..the list is endless.
People are missing out. Dried beans can be so delicious and easy to fix. And a lot cheaper and healthier than so many other things that cost more. Like you said, not fancy food, but good for us!

I store each kind in large glass containers with tight lids. I date the containers. I was raised by old fashioned cooks so this is just the way I always cook. I enjoy cooking, and when you make your own foods you know what’s in them.

Hubby Bob is always coming up with things he wants to cook and eat. I have lots of beans. I would eat those every day. Lots of different kinds. He gets tired of them. Guess that will start being my work lunch.

People often just don't know what to do with beans and/or can't have them. Not the most popular for sure.

I think many needy people lack the means (eg. no working stove) to use these products. Others lack the knowledge.
I've heard of community kitchens where people come together to cook things to take home. They can learn to create thrifty, nourishing food. It seems we need more of that.
