Lentils

How do you cook your lentils or do you cook lentils at all? I love legumes and this week, I am eating only them. They really are so delicious and comforting. No meat, just trying to give myself a break and save money. Lentils are so cheap to buy and cook. I do not buy canned lentils, I make my own in the instant pot from the dried bags.

I soak them overnight. Then, depending on size, I cook them from 5 to 10 minutes in my pressure cooker adding onliy water and a bit of milk. When they are cooked, I prepare the diced onion with salt, spices and garlic. If I have cooked rice I add some.

@RebeccasFarm It is very good. Most of the people here add sausage or ground meat but I donĀ“t like them that way. When I want an extra, I boil an egg, ground it and put some over the lentils. Or add some Parmesan cheese on top. But that is optional.

We normally soak the lentils over night before cooking them. Most used are the cow pea and green gram.

@RebeccasFarm We didn't grow up eating them and I don't know how to cook them. Vince doesn't like them and he does the cooking so we just don't have them.

I just cook them in a pot. They're so easy to cook and so versatile. Because I also have lots of carrots in the garden here is one of my favourite things to make:
