My adventures in cooking: Monday October 14th

Good afternoon myLotter's! I have nobody to tell but today i decided since the temperature is going up and down between 49 and 50 degrees and it is cold outside I was going to have soup. My cans of chicken noodle soup were over two years old. It said on the can to use it by the recommended date. I was not taking chances with chicken and potentially getting food poisoning. I found a can of Healthy Choice tomato soup that I would have had until January 2025 until the recommended day it goes bad. I opened the can with the can opener without my peer's help. I added the soup to the pan and added a can of water. I turned on the stove all by myself WITHOUT ANYBODY IN THE HOUSE WITH ME! My peer gave me the rule of never putting the heat up on the stove above number 6 unless I am boiling water. I used to make canned soup years and years ago, But it was never good as it was not hot because the can said heat but "do not boil" in bold print. i used to be petrified that something bad would happen to the soup on the burner. Today, I was calmer as I was praying to God for help and I put the knob on number 5 and constantly stirred. After every 30-40 seconds i tested it to see if it was still lukewarm. It took a while and then i had to turn up the heat to number 6 and then i could tell it was going to boil so i shut the heat off. Then i tasted the soup and it was very warm. Then the good news is my crackers were fresh even though they had an expiration date that was in April of this year. I had that for lunch and it was a tasty meal to soothe me when it was so cold today what did you cook today?

Congrats on your meal. You did well. I had Mexican Baked fish, and also baked some brownies.

Thank you! That sounds delicious! my sister is the brownie baker in my family. I am going to attempt to make blueberry muffins from a Jiffy Muffin mix that I just ordered from Walmart which will come in Tuesday between 9 a.m. and 11 a.m. I had to make my delivery later. I used to get the between 7 a.m. and 9 a.m. but they always come early for me and I am not opening the door to a stranger in the dark!

@LovesEverybody I used a food delivery app- swiggy from a vegetarian restaurant!! And it was tasty and heart satisfying!!

@anya12adwi That is a great idea! I can't force myself to use food delivery apps because they are so expensive! I would use one if they were reasonably priced =)

Look at you doing all that by yourself. You should be so proud I bet next time you'll heat up that soup without being fearful. Occasionally I'll find a can of something in my pantry that has expired and I throw it out. Like you I'm leery of eating something that has expired quite awhile ago.

Yes, I am proud! No, I won't be afraid the next time I make soup! My sister goes through my pantry every once in a while to ensure i am not eating expired food that is way too old. She says I can eat it if it is a month or two past the expiration date. She won't let me eat things that are years past the expiration date

chicken tortillas sound good! I salad had a tomato salad. Tomato soup is good, but i Love soups with meat and vegetables along with the broth. From a can of course as I don't have a pot big enough to make a pot of soup! I would love to make homemade soup one day!

@LovesEverybody i know i bought noodles once, put seasoning, oil and in 20ish minutes, i had a soup, the simplest ones tortilla was good, only one i like meat soups too; in these colder days, we need some extra energy
