Hello everyone. I hope your day is going well. It is 67 degrees F and sunny here at the Jersey Shore. Top down. It is only going to be warmer tomorrow. I'm done with in-person work for the day and back at the apartment. I took the dog out, fed him, and got changed. Next up I am going to shred carrots for the carrot cake. More on that in the next paragraph. I have TWO hours of tutoring this afternoon. Yes I'm happy about the extra $91 but I'm also kind of annoyed. I had an hour scheduled for today and emailed the mother about making up an extra hour this week since she is 2 weeks behind. She said she isn't available any day this week other than today. Do you how know TEDIOUS it is to try to do 2 hours in a row virtually? Okay fine. Whatever. The student and I will be bored together. I'm a little stressed about this though because I absolutely have to start on the carrot cake today. I can shred the carrots and make the brown butter in advance. I also want to pre-measure out the dry ingredients. I'd like to bake the cakes this evening but I don't know if I will have the motivation or energy to deal with that. If not then tomorrow afternoon (after an hour of tutoring) I will have to mix and bake the 3 layers of cake, make the cream cheese frosting, make the carrot roses, and assemble everything. I was talking to one of the secretaries in the office this morning and I was like "why am I such an overachiever? Why can't I just make brownies or a box of Duncan Hines with canned frosting?" So yes I do have big plans for the evening--dealing with the cake. It is a toss-up whether my ex will make an appearance. I just never know with him these days. In any case I won't be able to stay up to watch all of Kamala's DC speech today at the Ellipse. It starts at 7:15 (supposedly) so I will have to record it and watch tomorrow. What's everyone else up to this afternoon?
