Ever made an Impossible pie?

Today I made a pumpkin impossible pie which turned out yummy. It's called that because it's made without a crust.
Dale can't eat gluten (such as pie crusts), so this is a way for him to enjoy a pie.
The only difference is it contains a little gluten free Bisquick mix instead of the usual pie crust.
It really tastes the same and of course we topped it with Cool Whip.
Are you familiar with these kind of dishes?

Yeah, I really like Impossible chicken pot pie and impossible coconut pie. They are both winners in my book I am gonna have to look up the impossible pumpkin pie

This version just gives it a little more firmness instead of a crust.

@LadyDuck Most impossible pies I guess are made with Bisquick, but I use the gluten free Bisquick.

It can be very difficult. I've mastered some of it, but baking, especially sweets, is the hardest.

@1creekgirl OK. Keep us posted. I visited my husband on Sunday and brought him a pot roast dinner from Bob Evans. He didn't want me to go home which was very sad.

I have heard of pies with no crust and I think easier to make, Your sound really good,

They just have a little extra Bisquick or flour to take the place of a crust.

I used to make the crustless pumpkin pie for my Dad, who was a diabetic. He loved any kind of pie, but pumpkin was a favorite.

My Dad was what I call an ''appreciative eater'' as he just loved a good home-cooked meal. He never failed to tell me how much he liked my cooking. Made me feel so happy. Thank you.
