Dinner was palak paneer today. My day was okay. I love palak paneer; it’s such a comforting meal. The rich, creamy spinach puree with soft paneer cubes is just so satisfying. Btw paneer is like tofu save the fact its made from milk.
A quick recipe for palak paneer:
Blanch spinach leaves, then blend with green chilies.
Sauté garlic, ginger, and onions in oil.
Add tomatoes, spices (cumin, coriander, turmeric), and cook until soft.
Stir in the spinach puree and add paneer cubes.
Simmer briefly and enjoy!
What did you have for dinner today?

I love that. It is really good in an Indian restaurant..or here you can buy it premade in stores.

Yes it is. It's the only way one should eat spinach according to me!
