My Me Day!

As you have known, Sundays are my Me days. I scheduled it for myself. That means I can be with friends or just staying at home chilling.
Baking is one way of chilling myself. I baked coconut cupcakes this afternoon as I still had desiccated coconut to be consumed before the expiration date. Gladfully, I have a dishwasher now and don’t have to wash plenty of baking utensils.
As I was already in the kitchen, I was thinking of making Bihon (a thin rice noodles) with ground meat. My son and his wife came for a short visit but stayed longer as I asked them if they wanted to stay for dinner with us. They happily accepted my offer. It was a nice evening with my family. We have eaten the coconut cupcakes for dessert.
I wish I could give you some as I made 24 pieces of cupcakes. My daughter-in-law brought some home.

Thank you @RebeccasFarm. No, I am not a great cook. I just cook to be able to eat what I want and it’s cheaper than eating out. What do you do on your favourite day?

I made chili and some other soups and put them in the freezer. Those cupcakes look really cute with their fancy papers.
