Baking projects

I'm trying to clear some stuff out of the cabinets and fridge so I decided to do some baking this afternoon. Why not?
The first thing is chocolate chip and chunk cookies from Thomas Keller's Bouchon Bakery cookbook. I enjoy them as does my ex. He is a famous Michelen-starred chef. I've never eaten at any of his restaurants but I do have 2 of his books. (this one and Ad Hoc at Home) He obviously knows what he is talking about but he is such a restaurant chef. All measurements in the books are weights and things like liquid measurements. For example the amount of eggs for this recipe states "3 tablespoons + 2 and 1/2 teaspoons". Like what the hell? Who measures eggs in tablespoons and does that last 1/2 teaspoon left out really make a difference? I'm going to do 2 eggs and call it a day.
The other thing I'm going to make is a caramel apple pie. I'm using a recipe from Mark Bittman's baking book How To Bake Everything. I made the caramel last night which was quite the disaster but I managed to save it. I have a bunch of apples to use up and I consider a cold slice of apple pie as a perfectly legitimate breakfast.

Nope, I buy Hostess stuff, I do have a question. My friends got a Thanksgiving package from their aunt. She was overthoughtful and they brought up some stuff for me too since they had too much. Now I have a package of marshmallows, What can I do with those? Also what can I do with celery?

Yesterday I baked an apricot loaf. The basic ingredient is bran flakes breakfast cereal with apricots and sultanas added.
