A Day Late; A Different Dinner

I got a free turkey breast from our local grocery, but didn't cook it because my daughter was (is) in Utah for Thanksgiving with her dad and family. I had bought several canned meat options when the dock workers went on strike on the assumption some foods would be hard to get for a while. The only canned meat I had ever had previously was government issue canned pork that I used to make Chile Verde. It was delicious. So, buying canned beef was new to me. I knew someone who used to can her own beef at home, but hadn't tried any myself. I started with the Keystone ground beef, 28 ounces, and made meat sauce for spaghetti. The can was PACKED with meat and included the fat. Not full of water like you might expect. It turned out great. I then took a can of shredded beef with me on a road trip. My travel companion made meat and gravy with mashed potatoes. It was outstanding. So, I decided I'd make shepherds pie yesterday. Except we don't have a working oven at the moment, so I made it deconstructed style. Meat with peas and carrots in gravy in the slow cooker and heat and eat mashed potatoes in the microwave. It wasn't until I opened the can that I realized I'd grabbed the shredded beef instead of the ground beef, but it still turned out great. I just had one of the leftover platters for late breakfast. Gave a little bit to the dog after he got his meds. He ate it all, including the peas and carrots, so it was a hit with him, too.

If it works, it works. Nothing wrong with that.
